Time 2h15m

Yield 12 servings

Number Of Ingredients 13

Nonstick cooking spray
3/4 cup all-purpose flour, plus extra for dusting the pan
2 ounces bittersweet chocolate, chopped
2 medium very ripe bananas
2/3 cup sugar
1/4 cup canola oil
2 large eggs
3/4 cup white whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly mist a 9-by-5-inch metal loaf pan with nonstick cooking spray and dust well with all-purpose flour to cover the pan completely, tapping out the excess. Put the chocolate in a medium microwave-safe bowl and microwave on high in 30-second intervals, stirring, until melted and smooth, 1 minute to 1 minute 30 seconds. Set aside to cool slightly while preparing the batter. Combine the bananas and sugar in a large bowl and mash with a potato masher or fork until mostly smooth with just a few small pieces of banana left. Add the oil and eggs and stir until combined. Using a wooden spoon or rubber spatula, mix in both flours, the baking powder, baking soda and salt. Stir in the buttermilk and vanilla. Stir 1 cup batter into the melted chocolate. Fill the loaf pan with half the banana batter and then half the chocolate batter. Repeat the layers and gently swirl together using a spoon or knife. Bake until golden brown on top and a toothpick inserted in the center comes out clean, about 45 minutes. Cool in the pan 15 minutes, and then turn out onto a wire rack to cool completely. Serve warm or at room temperature. Cook's Note: To prepare your loaf pan for baking, you can also use a nonstick spray with flour already in it. Flouring the pan helps the bread rise well and prevents any collapse after it comes out of the oven. MOIST WHOLE WHEAT BANANA BREAD

Moist Whole Wheat Banana Bread image

Moist, delicious whole wheat banana bread. Yes, really! Best healthy banana bread recipe on the internet with a Breadtopia video tutorial to boot.

Provided by Eric Rusch

Categories     Recipes

Yield 1 Loaf

Number Of Ingredients 12

½ cup (1 stick or 4 ounces) unsalted butter
½ cup (3 ¾ ounces) packed light or dark brown sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 ½ cups (~ 12 ounces) mashed ripe banana (3-4 medium to large bananas)
¼ cup (3 ounces) honey (I used sugar - works fine)
2 large eggs
2 cups (8 ounces) whole wheat flour, traditional or white whole wheat (I found that 2 cups was closer to 10 ounces - guess my whole wheat is heavy)
½ cups (2 ounces) chopped walnuts

Steps:

  • Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.
  • Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.
  • Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a cake tester (like a toothpick) inserted into the center comes out clean, 10 to 15 minutes more. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

Tips for Baking a Perfect Whole Grain Healthy Banana Bread:

- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. - Use a combination of whole grain and all-purpose flour: This will give your banana bread a denser, more nutritious texture. - Don't overmix the batter: Overmixing can make your banana bread tough. Mix just until the ingredients are combined. - Bake the banana bread at a moderate temperature: This will help it cook evenly without burning. - Use a loaf pan with a non-stick coating: This will prevent the banana bread from sticking to the pan and make it easier to remove. - Let the banana bread cool completely before slicing and serving: This will help it hold its shape and make it easier to slice.

Conclusion:

Whole grain healthy banana bread is a delicious and nutritious snack or breakfast option. It's easy to make and can be customized to your liking. With its combination of whole grain flour, ripe bananas, and natural sweeteners, this banana bread is a healthier choice that still delivers on flavor. So, next time you're looking for a guilt-free treat, give this whole grain healthy banana bread a try!
