WHOLE-GRAIN CHOCOLATE CHIP COOKIES

These chewy-crispy whole-grain cookies are only 110 calories each and use a little applesauce to replace some of the fat. Challenge your friends and family to see if they can tell!

Provided by Food Network Kitchen

Categories     dessert

Time 1h5m

Yield about 30 cookies

Number Of Ingredients 11

1 1/2 cups whole-wheat white flour
1/2 cup old-fashioned rolled oats
1 teaspoon baking soda
Fine salt
1 large egg
1/4 cup smooth unsweetened applesauce
1 teaspoon vanilla extract
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1/2 cup granulated sugar* (See Cook's Note)
1/2 cup packed light brown sugar* (See Cook's Note)
3/4 cup semisweet chocolate chips

Steps:

  • Adjust two oven racks to the lower and upper third of the oven and preheat to 350 degrees F. Line two baking sheets with parchment paper.
  • Add the flour and oats to a food processor and pulse until the oats are finely ground. Transfer to a medium bowl, add the baking soda and 1/2 teaspoon salt and whisk to combine. Whisk together the egg, applesauce and vanilla in a small bowl.
  • Add the butter, granulated sugar and brown sugar to the bowl of a stand mixer fitted with a paddle attachment (or to a large bowl if using a hand mixer). Beat on medium-high until the mixture is light and fluffy, about 4 minutes. Add the applesauce-egg mixture and beat until incorporated, scraping down the sides of the bowl as needed. Reduce the mixer speed to medium-low and add the flour-oats mixture in two batches, mixing until just incorporated. Add the chocolate chips and mix until evenly distributed in the batter.
  • Drop heaping tablespoonfuls of batter onto the prepared baking sheets, about 2 inches apart. All the batter won't fit on the two sheets; cookies will need to be baked in batches. Bake until golden brown, 10 to 12 minutes, rotating the pans halfway through. Let the cookies cool for a few minutes on the baking sheets, then transfer to racks to cool completely. Once the lined baking sheets are cool, repeat with the remaining batter. Store the cookies at room temperature in airtight containers for up to 3 days.

HOMEMADE WHOLE GRAIN CRACKERS

Homemade Whole Grain Crackers image

There are plenty of whole-grain crackers on store shelves, but none taste as good to me as those made at home. You can use a mix of grains and flours to make them, including gluten-free varieties like millet, buckwheat and rice flours, and top them with any number of seeds, herbs or spices. They're quick to mix together and very easy to roll out. "Healthy" crackers can be hard and dry, but this week's offerings are not. I use olive oil in all of them, and some work best with a small amount of butter. I've been making sesame crackers for decades, tweaking my recipe over the years. They have a wholesome, rich, nutty flavor.

Provided by Martha Rose Shulman

Categories     easy, quick, appetizer

Time 20m

Yield About four dozen crackers

Number Of Ingredients 5

1 1/4 cups whole-wheat flour
1/2 cup toasted sesame seeds
1/2 teaspoon salt
5 tablespoons extra virgin olive oil or sesame oil
4 to 5 tablespoons water, as needed

Steps:

  • Preheat the oven to 350 degrees with the racks positioned in the middle and upper third. Line two baking sheets with parchment paper.
  • Mix together the flour, sesame seeds and salt in a mixing bowl, in the bowl of a stand mixer, or in a food processor fitted with a steel blade. If using a mixing bowl, add the oil and cut in with a fork. If using a stand mixer, mix at medium speed. In a food processor, pulse until the mixture is crumbly. Add the water, and mix with your hands, or at medium speed in a mixer or in the food processor, until you can gather the dough into a ball.
  • Lightly dust your work surface and roll out the dough, or roll out between pieces of parchment, plastic or wax paper. Cut into desired shapes -- squares, diamonds or cookie-cutter shapes -- and place on the baking sheet, close together but not touching.
  • Bake 15 to 20 minutes until lightly browned, switching the sheet trays front to back and top to middle halfway through. Remove from the heat, and allow to cool on racks.

Tips:

  • Use whole grain flour: Whole grain flour is a healthier option than white flour, as it contains more fiber, nutrients, and minerals. It also gives the chippers a heartier texture.
  • Don't overmix the dough: Overmixing the dough will make the chippers tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking helps to develop the flavor and makes the chippers easier to handle.
  • Use a variety of toppings: You can use a variety of toppings on your chippers, such as chocolate chips, nuts, seeds, or dried fruit. Get creative and have fun!

Conclusion:

These whole grain chippers are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. With their wholesome ingredients and satisfying flavor, these chippers are sure to be a hit with everyone who tries them. So next time you're looking for a tasty and nutritious snack, give these whole grain chippers a try!
