2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme

1 large roasting chicken (with pop-up timer if possible)

Steps:

  • In a small bowl, combine the spices.
  • Remove any giblets from chicken and clean chicken.

4 medium carrots (chopped into 1-inch pieces)
2 medium Yukon gold or red potatoes (chopped into 1-inch pieces)
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon pepper
4 pound whole chicken
1 tablespoon olive oil
½ lemon (cut in half)
4-6 sprigs fresh rosemary or fresh thyme
2 tablespoons unsalted butter (optional, for gravy)
2 tablespoons all-purpose flour (optional, for gravy)

Steps:

  • Place the onion, carrots and potatoes in the bottom of the slow cooker. Arrange them in a single layer as much as possible.
  • In a small bowl, stir together the spice rub ingredients: paprika, garlic powder, onion powder, dried oregano, dried thyme, salt and pepper.
