WHITE TRASH BROCCOLI CASSEROLE

White Trash Broccoli Casserole image

Any recipe that calls for a canned cream soup is kinda white trashy, in my opinion, but you gotta admit it tastes good and it's easy--and kids actually like it! ( In fact this is the recipe that finally got my son to say "I like broccoli!" ) I try to use a reduced fat cream soup and sour cream to keep the calories down. This is a great side dish for meatloaf, Salisbury steak or any hamburger-based dish.

BROCCOLI SAUTéED IN WINE AND GARLIC (BROCCOLI AL FRASCATI)

Broccoli Sautéed in Wine and Garlic (Broccoli al Frascati) image

Cooking cruciferous vegetables without boiling them, as in this recipe, seems to make them more fragrant and heady-just the way the robust Romans like their food.

Yield Makes 6 servings

Number Of Ingredients 7

6 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 pounds broccoli, cut into spears
1 cup Frascati or other dry white wine
1 tablespoon hot red pepper flakes
Grated zest of 1 lemon
Grated zest of 1 orange

Steps:

  • 1. In a 10- to 12-inch sauté pan, heat the olive oil with the garlic over medium-high heat until just sizzling. Add the broccoli and cook, tossing frequently and gradually adding the wine to keep the garlic from browning until the stalks are tender 8 to 10 minutes. Add the red pepper flakes and zests, and tossing well, serve immediately.

Tips:

  • Choose the right broccoli. Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid broccoli that is yellowing or has brown spots.
  • Blanch the broccoli. Blanching helps to preserve the broccoli's color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender. Immediately remove the broccoli from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
  • Make a creamy white sauce. The white sauce is the base of this casserole. To make the white sauce, melt butter in a saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk, stirring constantly. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce has thickened. Season with salt, pepper, and garlic powder to taste.
  • Add the broccoli and cheese. Once the white sauce is made, stir in the blanched broccoli and shredded cheese. Stir until the cheese is melted and the broccoli is evenly coated in the sauce.
  • Top with bread crumbs. Before baking the casserole, top it with a layer of bread crumbs. This will give the casserole a crispy topping.
  • Bake the casserole. Bake the casserole in a preheated oven for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.

Conclusion:

This white wine broccoli casserole is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The broccoli is blanched to preserve its color and nutrients, and the creamy white sauce is made with butter, flour, milk, and seasonings. The casserole is then topped with bread crumbs and baked until bubbly and golden brown. Serve the casserole with a side of salad or roasted vegetables for a complete meal.
