This is a recipe I developed from lots of trial and error. I just kept experimenting with my bread maker. This same dough makes beautiful dinner rolls as well.

1 1/3 cups milk
2 tablespoons butter or 2 tablespoons margarine
4 tablespoons sugar
2 teaspoons salt
4 cups flour
1 tablespoon yeast

Steps:

  • Place ingredients in bread maker following your manufacturers guidelines.
  • Personally I only mix it up in the bread maker. When it is done proofing I turn it out onto a floured surface shape it and place it in a greased (cooking spray) loaf pan. Let rise for approx 1 hour, til doubled. I bake for 30 minutes at 350 degrees.

It is summer and I still want to make my own bread without heating up the house.So I tried this and very pleased with the result. White whole wheat flour is new around here. Next time I will try it with regular whole wheat.

1 cup buttermilk
2 eggs
3 1/4 cups whole wheat flour
4 ml salt
2 tablespoons gluten
3 tablespoons margarine
1/4 cup honey
2 teaspoons dry active yeast

Steps:

  • Microwave buttermilk for 30secs to a minute so it's lukewarm.
  • Add all ingredients to breadmachine in the order listed.
  • Select 1.5 lbs loaf
  • NOTE: Due to difference in moisture content of flour you may want to watch bread mixture to ensure the right consistency. If the mixture is too dry add one tablespoon of buttermilk and a time & if it's too wet add a tablespoon of flour at a time. Make sure the buttermilk or flour is completely incorporated before adjusting again.

From my bread machine's recipe book, for use with the Basic Medium cycle. I'm also including the specs for bigger capacities but listing the recipe for a 1-lb loaf. My machine requires you to proof the yeast first; some may not so disregard Step 1 if you don't have to proof! (2 1/4 cups AP flour + 6 3/4 tablespoons vital wheat gluten = 2 1/4 cups bread flour) My Medium cycle for a 1-lb loaf takes about 70 minutes, other machines will vary.

3/4 cup warm water
2 tablespoons sugar
2 tablespoons sunflower oil
1 teaspoon kosher salt
2 1/4 cups bread flour
1 1/2 teaspoons active dry yeast

Steps:

  • If you have to proof the yeast first, proof it in the sugar and water in the bread machine's basin for 10-15 minutes or until foamy; then mix the other ingredients together and pop it in for the Basic Medium or Basic White cycle.
  • If not, just throw everything in, hit the Basic Medium or Basic White cycle for a 1-lb capacity, and kick back and let the machine do its work! The 1-lb loaf yields about 10 large slices.
  • For 1.5-lb loaf, use 1 cup water, 3 tablespoons oil, 3 tablespoons sugar, 1 1/2 teaspoons salt, 3 cups bread flour (3 TB vital wheat gluten + 3 cups AP flour) and 2 1/4 teaspoons active dry yeast.

This is from the King Arthur website and is for a loaf made with white whole wheat. These directions are for a 1 1/2 pound loaf, but you can adjust to a 1-pound or a 2-pound loaf based on the flour/liquid/yeast proportions your bread machine requires. I am posting this recipe here b/c this is our go-to bread recipe (I typically make a couple of loaves a week) and I wanted easy access to it in my Zaar Cookbook.

1 1/4 cups water
2 tablespoons oil (olive or veggie)
1/4 cup artificial sweetener (honey or maple syrup or sugar)
1 1/2 teaspoons salt
3 cups white whole wheat flour (may take up to 3 1/2 cups)
1 tablespoon vital wheat gluten
1 1/2 teaspoons instant yeast

Steps:

  • Put all ingredients in bread pan.
  • May add an optional 1/4 c of seeds (such as sesame, sunflower, or flax, or a combination). Sometimes I also add 1/4 c of wheat germ, oat bran or wheat bran instead of flax seeds.
  • Program for basic white bread.
  • Press start.
  • 3 hours cooking time is based on a 1 1/2 pound white loaf with a light crust in my bread machine. Baking time will vary according to settings you choose on your machine.

The base for this recipe was originally from Allrecipes but I've changed the recipe to suit my breadmaker and taste. When I made my first loaf of this I couldn't believe I had made something that looked and tasted like a commercially produced loaf. NOTE: My ABM is older and takes 2 1/2 hours to do a dough cycle. The times include rising time also.

Number Of Ingredients 6

2 teaspoons yeast (bread machine yeast)
3 1/4 cups flour
2 1/2 teaspoons gluten flour
1 1/3 teaspoons salt
1 1/3 tablespoons sugar
1 1/3 cups water (luke warm)

Steps:

  • Place the ingredients into your ABM in the order specified for your machine. Set it on the dough cycle.
  • When the dough cycle has beeped, LEAVE the dough in the machine for another 30 minutes. It will continue to rise again.
  • Preheat your oven to 190°C Grease a 9x5x3 loaf pan with butter.
  • Tip out your dough onto a lightly floured work area and roll into a long rectangle, making sure the width is no wider than 9 inches and about 1/2 inch thick. It doesn't matter about the length. You will hear all the air bubbles popping as you roll.
  • Once the air bubbles are gone, roll up, starting from one of the short ends. You may want to moisten the end of the dough to help seal it together.
  • Place roll of dough, seam side down, tucking ends under, in your loaf pan.
  • Leave to rise until doubled in size, approximately 30-40mins. Brush with melted butter.
  • Bake 190C for 30 minutes or until the loaf sounds hollow when tapped with the handle of a knife.
  • While loaf is hot brush with melted butter.
  • Remove loaf from pan onto a cooling rack.

50/50 WHOLE WHEAT BREAD (ABM)

This loaf bakes up tall and fluffy!! We use a wheat blend flour from Gold Medal and Bread flour for this recipe. The recipe below is for a 2 lb. loaf.

6 tablespoons shortening
1/4 cup sugar
1 1/2 teaspoons salt
2 cups gold medal better for bread wheat blend whole wheat flour (can use whole wheat)
2 cups gold medal better for bread flour
2 1/2 teaspoons active dry yeast

Steps:

  • Place all ingredients in bread pan, using the least amount of liquid listed in the recipe.
  • Select Whole Wheat cycle and Medium Crust setting.
  • Press start.
  • Observe the dough as it kneads. After 5 to 10 minutes, if it appears dry and stiff or if you machine sounds as if it's straining to knead it, add more liquid 1 tablespoon at a time until dough forms a smooth, soft, pliable ball that is slightly tacky to the touch.
  • After baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.
  • Note: Number of servings depending on thickness of slice.
