6 tablespoons all-purpose flour
4 cups milk
Salt
Freshly ground white pepper
Pinch ground nutmeg
1/2 pound fresh spinach, cleaned, stemmed and cut into thin strips
1/2 pound fresh spinach, cleaned, stemmed and cut into thin strips
8 ounces grated Parmigiano-Reggiano
2 cups ricotta cheese
1 egg
2 teaspoons chopped garlic
8 ounces grated mozzarella cheese
3/4 pound lump crabmeat, picked over for cartilage
1 1/2 pound lobster, cooked, meat removed and diced
1/2 pound fresh pasta sheets
Truffle oil, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saucepan, over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Whisk in the milk, 1/2 cup at a time. Season with salt, pepper and nutmeg and cook, stirring constantly for 4 to 6 minutes. Remove from the heat and stir in the spinach and 1/2 cup of the Parmesan. Set aside.
  • In a mixing bowl, combine the ricotta cheese, egg, garlic and mozzarella cheese. Season with salt and pepper. Mix well. Set aside.
  • Grease an 8 by 8 by 2-inch square pan. To assemble, spread 1 cup of the sauce over the bottom of the pan. Season the crabmeat and lobster with salt and pepper. Sprinkle 1/4 of the crabmeat and lobster over the sauce. Sprinkle some of the remaining Parmesan over the crabmeat. Cover the cheese with a sheet of the fresh pasta. Spread 1/4 of the cheese filling evenly over the pasta. Repeat the layering until all of the ingredients are used. Top the lasagna with the remaining cup of the sauce. Place in the oven and bake until bubbly and golden, about 45 minutes.
  • Remove from the oven and cool for 10 minutes before serving. Drizzle lightly with truffle oil, if desired.

1/4 cup all-purpose flour
3 cups 2% milk

RICOTTA MIXTURE:
1 carton (15 ounces) part-skim ricotta cheese

Steps:

  • Heat butter in a large saucepan over low heat until melted.
  • Add garlic.

In any case, it's delicious enough to be well-worth the effort. I developed this recipe mainly as an elegant entree for dinner parties but it also doubles nicely as a high-end covered dish. Enjoy!

8 ounces spinach linguine, cooked au dente
8 ounces linguine, cooked au dente
3 tablespoons salted butter
3 tablespoons extra virgin olive oil
1 lb raw shrimp, peeled, deveined, and de-tailed
2 garlic cloves, chopped
1 medium sweet onion, roughly chopped
8 ounces fresh mushrooms, trimmed and roughly chopped
4 tablespoons all-purpose flour
5 tablespoons unsalted butter
2 2/3 cups whole milk, pre-warmed to 100-degrees F
2 garlic cloves, minced
1/2 teaspoon kosher salt
1/2 tablespoon white pepper
24 ounces cottage cheese, small curd
16 ounces monterey jack cheese, shredded
4 ounces asiago cheese, grated
1 tablespoon dried parsley
4 ounces frozen spinach, thawed and chopped
1 large jalapeno pepper, de-seeded and minced
1 teaspoon Old Bay Seasoning

Steps:

  • Have the cooked pasta ready for use. Pre-heat the oven to 375-degrees F.
  • In a large no-stick skillet, over medium heat, melt the butter and add in the olive oil along with the chopped garlic. Pour about 2/3 of this blend into a bowl and set aside. Continuing to carefully stir over the medium heat, add in the onion, mushrooms and minced jalapeno and allow the mix to tenderize, (about 6 minutes).
  • Remove the vegetable blend from the skillet, re-add the reserved melted butter blend and add in the shrimp. Sprinkle the Old Bay seasoning over the shrimp. Sautee over medium heat for 6 minutes, stirring ocassionally. Remove the shrimp from the pan and set aside. (You can discard the butter blend or save it for use in another dish).
  • Set up a double boiler with 3 cups of water in the bottom section over high heat. In the top (dry) section, melt the 5 tablespoons of unsalted butter and add in the pre-warmed milk. As it begins to yield a little steam, whisk in the white pepper and the minced garlic. When it comes to a boil, whisk in the flour and continue to whisk until the sauce thickens. Allow the blend to continue at a low boil (adjust temperature if necessary), whisking with great frequency, for 15 minutes. If it gets too thick, add more pre-warmed milk, 1/4 cup at a time until desired consistency is achieved. (You want it about as thick as pancake batter.) At the end of the 15 minutes, remove from heat and set aside.
  • Spray a 9" x 13", or larger, casserole dish with the cooking spray. Lay in 1/3 of the white sauce and make sure that most of the bottom is covered. Then, lay in just a little more than half of the pasta, (about 60%). Cover the pasta with all the cottage cheese. Next, spread the spinach all over the top.
  • Layer the remaining pasta evenly across the top. Next, evenly distribute the remaining white sauce all over the pasta. Lay the cooked shrimp evenly across the white sauce and then distribute the onion-mushroom-jalapeno mix across the dish. Top this with all the Monterey Jack Cheese and the Asiago chees, and then finish by sprinkling the dried parsley across the top, just as a sort of garnish.
  • In the oven, pre-heated to 375-degrees F., place the dish on the middle rack, uncovered, and bake for 30 minutes. At the end of the 30 minutes, change the setting to BROIL, move the rack up to one below the top one, and broil the dish just until there is some light browning across the top (about 2-3 minutes). WATCH THIS CAREFULLY as it will burn quickly! Remove from oven when the top is lightly browned.
  • Allow the dish to "rest" for about 10 minutes prior to cutting into serving sizes. Serve with hot, fresh garlic bread, buttered Parker House Rolls, or with Texas Toast.

This is the absolute best tasting lasagna I have ever had. The red sauce offers sweetness and the white sauce gives it a warm creaminess. I came up with this recipe for my sister who doesn't eat pork, but have made it many times with traditional pork Italian sausage. Either way its yummy, hearty and sure to impress.

2 (8 ounce) boxes no-boil lasagna noodles
8 ounces six cheese Italian cheese blend
16 ounces shredded mozzarella cheese
16 ounces whole milk ricotta cheese
3 large sweet Italian sausage links
3 tablespoons extra virgin olive oil
10 fresh basil leaves
1 egg
2 (24 ounce) jars of san marzano tomato passata
1 (6 ounce) can tomato paste
16 ounces san marzano crushed tomatoes
10 garlic cloves
2 cups red wine
3 tablespoons dry Italian herb seasoning
1 large onion
1 pint heavy whipping cream
1 cup whole milk
3 tablespoons butter
3 tablespoons flour
fresh nutmeg
salt
pepper

Steps:

  • Begin by making the red sauce as it needs time to simmer and reduce.
  • In large heavy bottom sauce pan over medium/ high heat Sauté in olive oil half the onion add salt and pepper to taste.
  • Once onion is slightly browned add in the 5 cloves of crushed garlic, Sauté for a couple minutes.
  • Add the entire can of tomato paste and sauté carefully & stir continuously (it burns easily) until cooked about 2-3 minutes.
  • Next Stir in The 2 jars of Passata and 1 can of crushed tomatoes, re- season with salt and pepper.
  • Add wine to thin sauce to a light chunk style sauce. Stirring Sauce occasionally as it will reduce and become thicker re-season with additional salt if any is required,Lower heat to simmer. Stir occasionally.
  • Stir in 1-3 tablespoons of Italian dry herb seasoning to taste.
  • Chop 10 basil leaves into strips reserving half for ricotta mixture and gently half into sauce.
  • In separate pan begin to sauté sausage.
  • Add a slight bit of olive oil, allow to heat then add sausages with casings removed Brown until cooked completely.
  • With a slotted spoon remove sausage to a plate lined with a paper towel to drain. Reserving sausage drippings in pan.
  • Add remaining onion to sausage oil and sauté onion until slightly caramelized. Salt and Pepper.
  • Chop garlic and mince into a paste the remaining cloves and stir until cooked.
  • Combine the onion oil mixture into the tomato sauce. This will add a thickness to your sauce.
  • Simmer for at least 30 minutes
  • While Red Sauce is reducing in other heavy bottom pan begin to work on fillings and White Sauce.
  • Add butter & flour, Cook over low/med heat for about 3 minutes.
  • Add entire pint of cream.
  • Allow to slowly come to simmer.
  • Grate in 2 teaspoons of fresh nutmeg.
  • Add half of the milk reserve the remainder of milk Simmer for 5 minutes( DO NOT BOIL).
  • White Sauce should be able to coat the back of spoon if sauce is too thick like a paste or glue add remainder of milk slowly little by little until texture is more sauce like smooth slightly thick.
  • Remove from burner and let stand.
  • Prepare Ricotta Mixture:.
  • In a large glass or plastic bowl take reserved fresh basil and combine with 1 entire large jar of ricotta salt and pepper.
  • Mix well. Make sure mixture is properly seasoned and add 1 beaten egg.
  • Combine all ingredients well. Set aside.
  • Lasagna Assembly.
  • In large 11 by 15 GLASS baking dish, spray with original flavored Pam or any other non stick non flavored cooking spray.
  • Ladle 1 cup red sauce or enough to coat the bottom of the entire baking dish.
  • Arrange 1st layer of Noodles to cover bottom of pan.
  • Add layer of Ricotta mixture .
  • Cover with Mozzarella cheese.
  • Ladle red sauce until cheese mixture is covered.
  • Arrange 2nd noodle layer to cover.
  • Add a thin layer of Ricotta mixture.
  • Using a separate ladle than the red ladle in a layer of white sauce to cover the ricotta mixture.
  • Spoon the sausage onto the white sauce to cover.
  • Cover the sausage with the Italian blend cheese mix.
  • Arrange 3rd noodle layer to cover.
  • Add layer of Ricotta mixture .
  • Add a layer of Italian blend cheese.
  • Cover with red sauce .
  • Add final noodle layer.
  • Cover noodle with red sauce then a thick coating of Mozzarella cheese .

1 egg

Steps:
