It doesn't get much easier than this minty holiday-square recipe from TV chef Nikki Elkins, which takes just minutes to prepare.

Provided by Martha Stewart

Yield Makes 28 squares

Number Of Ingredients 5

14 chocolate graham crackers
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup light brown sugar
1/4 teaspoon coarse salt
30 milk chocolate peppermint-bark squares (12.45 ounces total), chopped

Steps:

  • Preheat oven to 350 degrees. Line a rimmed baking sheet with a nonstick baking mat or parchment paper. Place graham crackers, sugared-side down, in a single layer on baking sheet with edges touching; set aside.
  • Place butter, sugar, and salt in a small saucepan; bring to a boil over medium-high heat, stirring to dissolve sugar and salt. Reduce heat and cook at a rapid simmer until mixture reduces and is bubbly and syrupy, about 2 minutes. Pour over graham crackers, using an offset spatula to spread if necessary.
  • Transfer to oven and bake until bubbling, about 8 minutes. Remove from oven, let cool 3 to 4 minutes, and sprinkle with chopped chocolate. Let cool completely; refrigerate briefly if necessary to set chocolate. Break into pieces and serve.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and make the process go more smoothly.
  • Use High-Quality Chocolate: The quality of your chocolate will make a big difference in the final product. Use a good quality white chocolate that is at least 30% cocoa butter.
  • Temper Your Chocolate: Tempering your chocolate is an essential step that will help it set properly and give it a smooth, glossy finish. If you don't temper your chocolate, it will be more likely to seize or become grainy.
  • Keep Your Chocolate Cool: Chocolate is sensitive to heat, so make sure you keep it cool at all times. If you're working in a warm kitchen, you may need to chill your chocolate in the refrigerator or freezer for a few minutes before using it.
  • Don't Overmix: When you're mixing your ingredients, be careful not to overmix them. Overmixing can make your cookies tough.
  • Chill Your Dough: Chilling your cookie dough for at least 30 minutes before baking will help them spread less and keep their shape better.
  • Bake Your Cookies at the Right Temperature: The oven temperature is critical for baking cookies. Make sure you preheat your oven to the correct temperature before baking your cookies.
  • Don't Overbake Your Cookies: Overbaking your cookies will make them dry and crumbly. Bake them just until the edges are golden brown and the centers are set.

Conclusion:

These white chocolate peppermint crunch cookies are a delicious and festive treat that are perfect for any occasion. They're easy to make and can be enjoyed by people of all ages. So next time you're looking for a sweet treat, give these cookies a try!
