1 1/2 cups chocolate cookie crumbs
6 tablespoons butter, melted
2 tablespoons cornstarch
2/3 cup sugar
1/8 teaspoon salt
1/2 cup half-and-half
1/2 cup whipping cream
2 cups whole milk
3 egg yolks
6 oz white chocolate baking bars or squares, melted, cooled slightly
1 teaspoon vanilla
2 1/2 cups whipping cream
2/3 sugar
1 teaspoon vanilla
1/4 cup chocolate shavings

Steps:

  • Heat oven to 350°F. In medium bowl, mix cookie crumbs and melted butter. Press in ungreased 9-inch pie plate. Bake 10 minutes. Cool completely.
  • Meanwhile, in 2-quart saucepan, beat cornstarch, 2/3 cup sugar and the salt with whisk. Beat in half-and-half, 1/2 cup whipping cream and the milk. Beat in egg yolks. Add white chocolate. Heat mixture to boiling, beating constantly with whisk. Reduce heat to medium; cook until pudding coats back of wooden spoon. Stir in 1 teaspoon vanilla. Pour pudding into cooled pie crust. Cover with plastic wrap. Refrigerate 4 hours.
  • In large bowl, beat 2 1/2 cups whipping cream with electric mixer on low speed, gradually increasing speed until cream begins to thicken. Add 2/3 cup sugar and 1 teaspoon vanilla. Beat until cream holds its shape.
  • Top pie with whipped cream and chocolate shavings. Cut and serve.

1 (6 ounce) chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 quart coffee ice cream
1 (12 ounce) package miniature chocolate chips
1 (12 ounce) jar hot fudge topping
½ (18 ounce) package crushed chocolate sandwich cookies, divided
1 (8 ounce) container frozen whipped topping, thawed
¾ cup chocolate syrup

Steps:

  • Freeze the crust until firm, about 30 minutes. Place half the coffee ice cream into a bowl, and let it stand about 10 minutes to soften. Return remaining ice cream to the freezer. Mix softened ice cream with the mini chocolate chips. Spread the ice cream and chips in an even layer over the frozen crust. Cover with plastic wrap, and freeze for 2 hours.
  • Heat the topping in the microwave on low until warm and easy to pour, 30 seconds to 1 minute (do not let the sauce get very hot). Pour into a bowl. Set aside 2 tablespoons cookie crumbs for garnish; stir remaining cookie crumbs into the fudge topping. Remove the pie from the freezer, and layer the cookie crumbs and fudge topping mixture over the ice cream with chips. Cover with plastic wrap, and return to freezer for 2 hours.
  • Take the remaining frozen coffee ice cream out of the freezer, and allow to stand for about 10 minutes to soften. Layer the ice cream over the layer of cookie crumbs and fudge topping. Cover with plastic wrap, and return to freezer for 2 more hours.
  • Remove pie, and frost the top of the pie with the whipped topping. Top with the reserved cookie crumbs. Cover with plastic wrap, and return to freezer for 2 more hours to freeze the whipped topping layer. Cut the pie into serving pieces, and drizzle each serving with about 1 tablespoon of the chocolate syrup.

2 x Oreo biscuits , centres scraped out
100g butter , melted
100g butter
140g dark chocolate , chopped, plus extra for grating
2 medium eggs
140g dark soft brown sugar
25g plain flour
500g pot ready-made vanilla custard
50g dark chocolate
½ tsp vanilla extract
3 gelatine sheets
300ml double cream

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a food processor, whizz the biscuits to a fine crumb. Pour in the melted butter and pulse briefly to mix well. Spoon into a 24cm pie dish and press into the base and up the sides. Bake in the oven for 10 mins to firm up.
  • To make the brownie layer, melt the butter and chocolate together in a bowl set over a pan of simmering water (making sure that the bottom doesn't touch the water), or in short bursts in the microwave.
  • In a separate bowl, whisk the eggs until pale, fluffy and doubled in size, then add the sugar and whisk until thickened. Fold in the chocolate mixture, then sieve in the flour and fold in.
  • Pour into the baked biscuit case and return to the oven for 15-20 mins until the brownie has a crust on top. Set aside and leave to cool (if the brownie has risen a lot, it should sink down slightly as it cools).
  • Once the brownie base is cooled, put the custard, chocolate and vanilla in a pan and cook over a medium heat, stirring, until the chocolate has melted into the custard. Remove from the heat.
  • Soak the gelatine in a little cold water and, once softened, remove from the water and squeeze to remove any excess. Stir into the warm custard mixture until dissolved. Let the custard cool slightly, then pour over the brownie layer. Put in the fridge for a few hrs, or overnight, until set.
  • Remove the mud pie from the fridge about 30 mins before serving so that it can come to room temperature for easy slicing. Just before serving, whip the cream to soft peaks and spoon it over the custard layer, then grate over some dark chocolate.

1/4 cup water
1 teaspoon vanilla
8 ounces brownie mix
1/2 teaspoon baking soda
1/2 cup flour
1 cup sugar

8 ounces cream cheese, softened
6 ounces unsweetened chocolate, melted & cooled
1 teaspoon vanilla
1/2 cup chocolate chips (combined together) or 1/2 cup nuts (combined together)
1 cup whipping cream
1/4 cup sugar
1/4 cup cocoa powder

Steps:

  • Preheat oven to 350 degrees. Grease bottom & sides of a 9-inch pie plate.
  • FOR CRUST: In a mixing bowl, blend eggs, water and vanilla, mixing well.
  • Add brownie mix, soda, and flour, stirring until well blended. Spoon into prepared pan.
  • Bake for 10-12 minutes (take note of brownie mix directions). Remove from oven (crust will be puffy); cool for 30-60 minutes. Press crust down with back of large spoon, forming to sides of pan to make a hollow for filling. Continue to cool while preparing filling.

  • Slather filling over the crust. If using chocolate chips and nuts, sprinkle over the filling and press in gently. Chill.
  • FOR TOPPING: Use same mixing bowl, combine cream with sugar and cocoa, whipping until soft peaks form; whip another 30 seconds.

1/3 cup Gold Medal™ all-purpose flour
1/3 cup baking cocoa
1 teaspoon vanilla

1/4 cup hot fudge sauce or topping
1 cup whipping (heavy) cream
2 tablespoons powdered sugar
2 to 3 tablespoons hot fudge sauce or topping, if desired

Steps:

  • Heat oven to 325°F. Grease bottom and side of round pan, 8x1 1/2 inches, or pie plate, 9x1 1/4 inches. Stir together granulated sugar, butter, flour, cocoa, vanilla, salt and eggs in medium bowl. Stir in nuts. Pour into pan.
