Tips:
- For a smooth and lump-free meringue, make sure the egg whites are at room temperature before whipping.
- Use a clean, grease-free bowl and whisk when whipping the egg whites. Any grease or residue can prevent the egg whites from whipping properly.
- Whip the egg whites gradually, starting on low speed and increasing to high speed as the whites begin to foam.
- Continue whipping the egg whites until they reach stiff peaks. This means that when you lift the whisk out of the bowl, the peaks of the meringue should stand up straight.
- When adding the sugar to the egg whites, do so gradually, one spoonful at a time. This will help prevent the meringue from becoming grainy.
- Once the sugar has been added, continue whipping the meringue until it is glossy and thick.
- To prevent the meringue from weeping, make sure it is fully cooked before removing it from the oven.
- For a crispy meringue, bake the pie at a high temperature for a short period of time.
- For a softer meringue, bake the pie at a lower temperature for a longer period of time.
