WHITE CHOCOLATE CHERRY CUPCAKES OR ICING
Recipe for the "basic vanilla cupcakes" recipe I previously posted or use the recipe of you're liking. Add some white chocolate chips and/or cherries to batter before baking! Or use as topping! I like to dip stemmed cherries in melted white chocolate before I set atop!

Steps:
- Prepare, bake and cool cupcakes.
- Melt 2 1/4 c white chocolate chips, cool slightly.
- On medium speed, beat butter until fluffy. Beat in melted chocolate, vanilla, confectioners' sugar until smooth.
- Chill until thickened (approx 15 mins).
- Spoon jam or filling until freezer bag. Snip 1/4" hole in one corner. Insert bag tip 1" deep into center top of each cupcake. Squeeze 1 Tbs jam into each.
- Transfer frosting into pastry bag fitted with decorative tip and pipe over cupcakes.
- Optional topping:.
- Sprinkle with edible glitter or red sprinkles and white chocolate shavings from chocolate bar. Melt remaining white chocolate and barely dip fresh cherries into mixture. Cool and set atop each cupcake.

- In a heavy saucepan, combine evaporated milk and chocolate. Cook and stir over low heat until chocolate is melted. Cool to room temperature.
- In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition.
- Combine the flour, baking soda and salt; add to the creamed mixture alternately with chocolate mixture. Beat just until combined.
- Pour into a greased and floured 10-inch tube or bundt pan.
- Bake at 325 degrees for 1 hour or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from pan to a wire rack; cool completely.
- FOR ICING: In a heavy saucepan, melt chocolate and butter over low heat until blended and smooth, stirring often.
- Remove from the heat.
- Stir in the confectioners sugar, vanilla and enough milk to reach desired consistency.
- Drizzle over cake.

- Preheat oven to 350. Spray 8 x 8 pan with Baker's Joy or lightly grease and flour it.
- In a small bowl, mix cocoa powder, food coloring and 1 teaspoon of the vanilla to form a paste. Set aside.
- With an electric mixer, cream butter and sugar till light and fluffy. Add eggs, one at a time, then add second teaspoon of vanilla. With mixer on medium, beat in cocoa paste. Add flour and salt, and mix just until combined.
- Spread in pan. Bake for 25-30 minutes, or until toothpick inserted in center comes out clean. Cool before frosting.
- Frosting:.
- Melt the white chocolate according to the instructions on your package and set it aside. Cream butter with mixer till fluffy. Add vanilla. Slowly mix in powdered sugar, then white chocolate. Add enough milk to reach desired consistency. Frost the top of the brownies and then hide them from everyone! They're so good you won't want to share them.
- I keep these in the frig because I think they taste best cold.

CARROT CAKE WITH CREAM CHEESE WHITE CHOCOLATE ICING RECIPE - (4.3/5)

- For the CAKE: Preheat oven to 350°F. Lightly spray 2 nine in. round pans with vegetable spray, or use Wilton Cake Release (Click here for complete instructions on preparing baking pans.) In large mixing bowl, beat eggs until foamy; add oil and vanilla and beat well. Mix flour, sugar, baking soda, cinnamon, nutmeg, cloves, allspice and salt together; add to egg mixture and mix well. Fold in carrots, nuts, raisins and pineapple. Pour into prepared pans and bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans on cooling grid and invert on grid to cool. Makes 5 1/2 cups batter. For the ICING: Melt Candy Melts according to directions. Allow coating to cool slightly, stirring occasionally (don't let it harden). In a mixing bowl, beat the cream cheese (preferably with a flat beater) until smooth and creamy. Gradually beat in the cooled coating until blended and smooth. Beat in the butter and lemon juice. Smooth a small amount of icing on bottom cake layer; top side up. Top with second layer bottom side up. Frost cake with remaining icing. Refrigerate until ready to serve; bring to room temperature 30 minutes before serving. In a pinch, use store bought frosting.
CARDAMOM SPICED CARROT CAKE WITH WHITE CHOCOLATE CREAM CHEESE ICING

- For the cake:
- Preheat the oven to 350 degrees F. Grease 3 (8-inch) round cake pans and line the bottom of the pans with parchment paper. Spray the paper and pans with baking spray. Set the pans aside until ready to use.
- In the bowl of an electric mixer on medium speed, beat the oil and sugars together until combined. Mix in the vanilla and add the eggs, 1 at a time, mixing well after each addition. Add the carrots and pineapple and mix until combined.
- In a large bowl sift together the 2 1/2 cups flour, baking powder, baking soda, salt, cardamom and cinnamon. With the mixer speed on low, add the flour mixture to the carrot mixture alternately with the buttermilk, beginning and ending with the flour. Mix until just combined. In a small bowl, toss the pecans with the remaining 1 tablespoon of flour. Fold the pecans into the batter.
- Pour the batter evenly into the prepared cake pans. Bake until a toothpick inserted in the center of the cakes comes out clean, about 35 to 45 minutes. Cool the cakes in the pans on wire racks for 15 minutes. Remove the cakes from the pans and cool completely on the racks.
- While the cakes are cooling, prepare the icing. In the bowl of an electric mixer on medium speed, beat the butter and cream cheese together until well combined. Reduce the speed to low and gradually add the confectioners' sugar. Mix until combined. Add the vanilla and white chocolate. Increase the speed to medium-high and beat until smooth, about 1 to 2 minutes. Set aside 1 cup of icing for decoration. Add the heavy cream and beat until combined.
- To frost the cake, arrange 1 cake layer on a cake plate. Spread the top with the cream cheese icing and top with a second and third cake layer, spreading the icing between each layer. Spread the icing on top and around the sides of the cake. Apply the almonds to the sides of the frosted cake. Fill a pastry bag, fitted with a star tip, with the reserved icing and pipe a border around the top of the cake. Cut the cake and serve.
DARK CHOCOLATE BUNDT CAKE WITH WINTRY WHITE ICING
This sounds so good! Was going through the pile of papers (that never goes away) on my desk and found this recipe that I'd torn out of a Southern Living magazine. It was submitted by Jerry Mills of Birmingham, AL (where I'm from!). Haven't tried it yet, but am posting to help get rid of the paper pile on my desk!

- Melt chocolate in a microwave-safe bowl at HIGH for 30-second intervals until melted (about 1 1/2 minutes total). Stir in chocolate syrup until smooth.
- Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.
- Sift together flour, baking soda, and salt. Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla and melted chocolate just until blended. Pour batter into a greased and floured 14-cup Bundt pan.
- Bake at 325° for 1 hour and 20 minutes or until a long wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 15 minutes; remove from pan to wire rack, and let cool 30 minutes or until completely cool. Garnish with wintry-white icing.
- To make icing, stir together all ingredients until smooth.

- Beat butter, sugar, salt, eggs, milk, rum, and baking powder till well mixed.
- Add in flour and mix well.
- Gently fold in the fruit, nuts, and chocolate chips.
- Pour into a buttered and floured 9 1/2" by 5 1/2" bread pan.
- Bake in preheated 350°F oven until browned or about 60-75 minutes.
- Let stand in pan a few minutes then remove and place on rack to cool completely.
- While cooling melt white chocolate over a double boiler or in the microwave.
- Combine frosting ingredients and beat well with mixer.
- Frost cool cake and let it flow over the sides.
- Can garnish with leftover fruit, nuts, or maraschino cherries cut into shapes.
- Freezes well but I prefer mine without the icing until it's thawed or it ends up separating and getting icky.

- Melt chocolate in top of double boiler.
- Stir flour into chocolate.
- Add milk a little at a time and blend well.
- Cook over medium heat, stirring constantly, until very thick.
- It should have the texture and consistency of thick pudding.
- Cool completely.
- In a large bowl, beat sugar, butter and vanilla until light and fluffy.
- Gradually add cooled chocolate mixture and beat until icing is the consistency of whipped cream.
