These cookies that I adapted from another recipe call to mind ones my mother used to bake. Instead of stirring in raisins like she did, though, I add bright red cranberries for festive flair.

Time 1h50m

Yield 2 dozen

Number Of Ingredients 10

1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 cup dried cranberries, chopped
3/4 cup white chocolate chips
3/4 cup macadamia nuts, chopped

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper.
  • With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

Tips:

  • Soften the butter: This will make it easier to cream together with the sugar, resulting in a light and fluffy cookie.
  • Chill the dough: This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Roll the dough in granulated sugar: This will give the cookies a sparkling, crunchy exterior.
  • Bake the cookies until they are just set: Overbaking will dry them out.
  • Let the cookies cool completely: This will allow them to firm up and develop their full flavor.

Conclusion:

These white chocolate cranberry oatmeal walnut cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are chewy, flavorful, and packed with white chocolate chips, dried cranberries, and walnuts. Whether you enjoy them as a snack, dessert, or even a breakfast treat, these cookies are sure to be a hit. So next time you are looking for a sweet and satisfying treat, give these cookies a try!
