This is pretty close to the Cranberry Bliss Bars they sell at Starbucks®, but I think these are way better!

Provided by fastuart

Time 4h15m

Yield 24

Number Of Ingredients 15

1 ¼ cups light brown sugar
1 cup unsalted butter, softened
3 large eggs
1 ½ teaspoons vanilla extract
1 teaspoon ground ginger
¼ teaspoon salt
1 ½ cups all-purpose flour
¾ cup dried cranberries
½ (12 ounce) package white chocolate chips
Frosting:
½ (8 ounce) package cream cheese, softened
3 cups powdered sugar
4 teaspoons freshly squeezed lemon juice
½ teaspoon vanilla extract
¼ cup dried cranberries, chopped

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter flavor and a more vibrant color than dried cranberries.
  • Chop the cranberries finely. This will help them distribute evenly throughout the granola bars.
  • Don't overcook the granola. Overcooked granola will be dry and crumbly. Bake the granola just until it is golden brown and fragrant.
  • Press the granola firmly into the pan. This will help the bars hold together better.
  • Chill the granola bars before cutting them. This will make them easier to cut and will help them hold their shape.
  • Store the granola bars in an airtight container at room temperature for up to 2 weeks. You can also freeze the granola bars for up to 2 months.

Conclusion:

These white chocolate cranberry granola bars are a delicious and healthy snack that is perfect for on-the-go. They are made with simple, wholesome ingredients and are packed with flavor. The combination of sweet white chocolate, tart cranberries, and crunchy granola is irresistible. These granola bars are also a great source of fiber, protein, and healthy fats.
