1 package (8 ounces) cream cheese, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh raspberries
1/2 cup vanilla or white chips

Steps:

  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat in well after each addition. Stir in vanilla. Combine the flour, baking powder and salt; add to cream cheese mixture just until blended. Fold in raspberries and chips., Fill greased or paper-lined muffin cups two-thirds full. 1 cup plain flour
1/2 teaspoon baking powder
1/4 cup sugar
1/4 cup white chocolate chips
1 egg, lightly beaten
1/2 cup skim milk
1/2 teaspoon vanilla extract
1/4 cup butter, melted
1/3 cup frozen mixed berries, thawed on paper towel for 5-10 minutes

Steps:

  • Heat oven to 180°C.
  • Lightly grease a 6 x 1/2-cup capacity muffin pan.
  • Sift flour and baking powder into a large bowl.
  • Add sugar and white chocolate chips. Stir until combined.
  • Whisk eggs, milk, vanilla and butter in a separate bowl until just combined.
  • Stir butter mixture into flour mixture until just combined. Gently swirl through berries.
