½ cup water
1 medium onion, chopped
1 (4 ounce) can diced green chiles
1 cup shredded Monterey Jack cheese
1 (10 ounce) package corn tortillas, warmed
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup water
1 teaspoon chicken stock concentrate (such as Better than Bouillon®)
½ teaspoon ground cumin
1 cup plain Greek yogurt
½ cup pepper Jack cheese
½ cup shredded Monterey Jack cheese

Steps:

  • Place chicken breasts, water, and onion in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Drain off water. Shred chicken using 2 forks. Mix in green chiles.
  • Combine chicken mixture with Monterey Jack cheese. Spoon some of the chicken filling into the middle of each tortilla and roll up tightly. Grease a 9x13-inch casserole dish; arrange filled tortillas in the dish.

3 boneless skinless chicken breasts (cooked and shredded)
1/2 teaspoon chili powder
2 1/2 cups shredded Monterey Jack cheese (divided)
8 soft flour tortillas
3 Tablespoons butter
3 Tablespoons flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can diced green chilies
1 teaspoon dried cilantro
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 13 inch pan using non-stick cooking spray.
  • Mix cooked chicken, chili powder (optional) and 1 cup of cheese together. Roll up in tortillas and place in pan.
  • In a medium sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.

4 boneless, skinless chicken breast fillets
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 green bell peppers
2 red bell peppers
2 yellow bell peppers
2 or 3 hot chiles, such as serrranos, jalapenos or the like
1 large onion, diced
1 jalapeno, seeded and finely diced
1 tablespoon vegetable oil
3 cups low-sodium chicken broth, plus more as needed
1 1/2 cups heavy cream
1 teaspoon paprika
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
3 1/2 cups grated Monterey jack cheese
1 cup sour cream, plus more for serving
16 small corn or flour tortillas
1 cup store-bought salsa
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Sprinkle the chicken breasts with salt and pepper and drizzle with the olive oil. Put on a baking sheet and bake until just cooked through, about 15 minutes. Let cool slightly, then shred the meat with 2 forks.
  • Roast the bell peppers and chiles directly on a gas burner (or directly under the broiler) until the skin is mostly black. Throw the peppers and chiles into a plastic storage bag and seal it. Let them steam inside the bag for 30 minutes or so. Core and seed, then scrape off the black skin. Chop and set aside.
  • In a large skillet over medium heat, saute the chopped onions and jalapeno in the vegetable oil until the onions are translucent, 2 to 3 minutes. Throw in the shredded chicken, then stir in 1 cup of the chicken broth and 1 cup of the heavy cream. Add 1/2 teaspoon of the paprika and some salt and pepper, then add half of the chopped roasted peppers and chiles. Stir the mixture around and let it cook for a couple of minutes, then set it aside.
  • In a separate skillet over medium-high heat, melt the butter. Sprinkle in the flour and whisk it together to combine. Cook, whisking constantly, for 1 minute. Then pour in the remaining 2 cups chicken broth, stirring constantly. Cook, stirring, until the mixture is smooth, 1 to 2 minutes. Then add the remaining 1/2 cup heavy cream, the remaining 1/2 teaspoon paprika and 1 1/2 cups of the grated cheese. Finally, stir in the sour cream and the rest of the chopped roasted peppers and chiles. If the sauce needs a little thinning, splash in as much broth as you need. Give the sauce a taste and add salt if it needs it (with all the cheese, it shouldn't need much).
  • Preheat the oven to 350 degrees F.
  • Wrap the tortillas in paper towels and microwave until very soft and pliable, about a minute.
  • Place a small amount of the chicken mixture and about a tablespoon of the grated cheese down the center of each tortilla. Fold over the edges and arrange them seam-side down in a 9-by-13-inch baking dish. Pour the sauce over the top. Sprinkle the top with the remaining 1 cup grated cheese and bake until bubbly, 20 to 25 minutes.
  • Serve with a dollop of sour cream and salsa on top and a sprinkle of cilantro leaves.

You'll notice it gives a great zesty dimension to the dish. I recommend serving with sides of salsa and sour cream and a nice helping of yellow rice. Mmmmmm!

4 -5 boneless skinless chicken breasts
3 tablespoons olive oil
1 teaspoon fajita seasoning mix
1/2 teaspoon onion powder
salt and pepper
1/4 teaspoon ground cayenne pepper (to taste)
2 (15 7/8 ounce) cans small white beans or 2 (15 7/8 ounce) cans great northern beans
1/4 cup water
1 teaspoon ground cumin
1 (33 ounce) package of small mexican corn tortillas
2 cups shredded colby-monterey jack cheese
1 cup shredded cheddar cheese

Steps:

  • Heat large pan with olive oil. Add chicken either whole or sliced into strips.
  • Season chicken in pan with fajita seasoning, onion powder, cayenne pepper, and salt and pepper, using more or less according to your preferred taste.
  • Meanwhile, as chicken cooks, drain beans from cans and rinse thoroughly in a colander. Place in food processor or bowl. Add water. Grind beans with food processor or a hand chopper until resembling refried bean texture, like a paste.
  • Add cumin, more cayenne pepper if desired, and a generous amount of salt to bean paste. Blend well.
  • Once chicken is cooked, remove from heat and cut in strips if not done so already. Set aside.
  • Take a single corn tortilla, and spread a spoonful of bean paste on it. Put a few pieces of the cut up chicken down the center in a line. Add a sprinkle of the colby jack cheese blend.
  • Roll up the tortilla and place seam side down in the casserole dish. Repeat using as many tortillas as it takes to fill the entire dish.
  • With leftover bean paste, spread in cracks and crevices of enchiladas, like mortar on bricks.
  • Sprinkle cheddar cheese over top of the entire dish.
  • Bake in oven at 350 degrees for 15 or 20 minutes or until hot. Use broiler if necessary to melt cheese completely.
  • Serve with a side of yellow rice and condiments such as sour cream and salsa.

This is a spiced-up version of a recipe I found in a recent issue of *Cooking for 2*. It's a great way to make use of leftover chicken or holiday turkey.

1 teaspoon vegetable oil
1 small white onion, diced
1 yellow bell pepper, diced
1 (10 ounce) can of diced tomatoes and green chilies
1/2 chipotle chile in adobo (you can use a whole chipotle for extra kick)
3 garlic cloves, peeled
3 teaspoons tomato paste
1 tablespoon coarse yellow cornmeal
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 1/3 cups sour cream
4 cups shredded cooked chicken
3 cups grated monterey jack cheese
12 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in a small skillet over medium-high heat, add onion and bell pepper and saute until they just begin to brown, remove from heat and set aside.
  • In a blender or food processor, combine the canned tomatoes, chipotle pepper, garlic, tomato paste and corn meal, blend or process on high speed until smooth and then pour the red sauce into a shallow mixing bowl that's at least six or seven inches in diameter.
  • In a medium sized mixing bowl, combine soup and sour cream.
  • Spread 1/2 of the soup and sour cream mixture over the bottom of a 9 x 13 inch baking dish coated with cooking spray.
  • Taking one corn tortilla, dip it into the red sauce to coat both sides, then place about one tbs. of the cheese and 1/3 cup of the chicken in the center of the tortilla, roll it up and place it in the bottom of the baking dish, continue until you have a single layer of enchiladas covering the bottom of the dish (I was able to fit in ten enchiladas, eight placed side by side vertically with two more placed horizontally at the top of the dish).
  • If you have any red sauce left over, pour it over the enchiladas, and distribute any remaining chicken over the top.
  • Spread the other 1/2 of the soup and sour cream mixture over the top of everything.
  • Sprinkle with the remaining cheese and the onion and bell pepper.
  • Bake in the center of the oven for 20-25 minutes until bubbly and heated through.

This recipe was in our local paper several years back. It was a restaurant review of Chez Jose's. I went to the restaurant; so enjoyed this dish, that I came home to prepare it for our family. It has been a favorite ever since. It is now my gift to you. And I still have it at Chez Jose's every, single time that I go there.

1 roasting chicken, cut up
1 medium onion, diced
1/2 cup dry white wine
1 cup chicken broth
2 garlic cloves, minced
2 teaspoons white pepper
2 teaspoons dried oregano
2 1/2 teaspoons salt (divided)
2 1/2 limes, juice of (divided)
1/2 cup half-and-half
1 pinch cayenne pepper
1 lime, zest of (or more)
4 -6 corn tortillas
16 ounces sour cream (I use gluten free)
1 cup cheddar cheese, grated (I use more)

Steps:

  • Put chicken, onion, wine, chicken broth, garlic, white pepper, oregano, 2 teaspoons of salt and the juice from 1-1/2 limes,(bottled lime juice works nicely, also) and enough water to cover chicken. Simmer until meat falls off the bone (about 45 minutes)(I just use my pressure cooker for 35 minutes after it starts to release it's pressure.).
  • Remove chicken from pot, into bowl, with a slotted spoon and allow to cool until you can handle it easily. Remove bones from the chicken. Discard bones;reserve meat. This can even be done the night before. Save the stock, it makes into a wonderful chicken soup,later.
  • In a small bowl stir sour cream,the half and half, 1/2 teaspoon salt, a good pinch of cayenne pepper, remaining lime juice and rind together.
  • Lightly grease microwave proof casserole dish that is big enough to lay an 8 inch corn tortilla in it flat.
  • Soften the corn tortilla's in the microwave for a few minutes, layered between a clean damp kitchen towel.
  • To Assemble the Enchiladas:.
  • Place a corn tortilla in the bottom of the prepared casserole dish. Layer with chicken meat and top with the lime/sour cream mixture. Sprinkle with cheese, repeat these layers until the ingredients are gone. The top layer shall be the lime/sour cream mixture and more cheddar cheese.
  • Put in microwave for about 6 minutes or until it is bubbling nicely and cheese is melted.

2 cooked chicken breasts (or equivalent turkey)
8 ounces low-fat cream cheese
1 cup half & half light cream (or use cream)
1 teaspoon white vinegar
1 1/2 teaspoons chili powder
salt and pepper
4 ounces butter
6 -12 corn tortillas
8 ounces gruyere cheese
cayenne pepper (optional)

Steps:

  • Section meat and mix lightly with cream cheese.
  • Form into logs about 1 inch in diameter and a little shorter than the diameter of your corn tortillas.
  • Stir salt, pepper, vinegar and chili powder into cream. If everyone you're serving like heat, add cayenne pepper to taste.
  • Melt butter. Coat both sides of a tortilla generously, then put a chicken/cheese log in the middle of a tortilla and roll up. Lay enchilada in pan (seam side down). Repeat for all tortillas and logs.

3 (7 ounce) skinless, boneless chicken breast halves
3 tablespoons olive oil
2 teaspoons Old El Paso Fajita Seasoning Mix-Dry PLB
salt and ground black pepper to taste
⅔ cup Nacho Cheese Sauce
½ cup diced onion
2 (8 ounce) cans diced green chile peppers, divided
5 ounces cream cheese, softened
1 small jalapeno pepper - stemmed, seeded, and diced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon dried oregano
1 (10.5 ounce) can condensed cream of chicken soup
5 ounces milk
½ cup shredded white Cheddar cheese
7 (8 inch) flour tortillas
12 ounces shredded Mexican-blend cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Rub chicken breasts on both sides with olive oil, then sprinkle with fajita seasoning, salt, and pepper. Place on the prepared baking sheet.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and allow to cool. Keep oven on.
  • Shred chicken, discarding any extra fat or tough bits. Place in a large bowl with nacho dip, onion, 1 can chile peppers, cream cheese, jalapeno, cumin, garlic powder, chili powder, oregano, and salt to taste; mix to combine.
  • Combine condensed soup, remaining can of green chile peppers, milk, and Cheddar cheese in a pan over medium heat. Stir to combine and cook until sauce is heated through, 3 to 5 minutes. Transfer 1/4 cup sauce to the bottom of a 9x13-inch baking dish. Leave remaining sauce in the pan.
  • Distribute filling evenly amongst tortillas, then sprinkle 2 tablespoons Mexican cheese on each. Transfer enchiladas to the baking dish and pour remaining sauce over top. Sprinkle with remaining Mexican cheese.
  • Return to the oven and bake until cheese is hot and bubbly, about 20 minutes. Serve hot.

7 low carb or fat free flour tortillas (you can use regular flour tortillas)
2 c cooked, shredded chicken
2 c fat free cheddar cheese (or regular colby jack cheese)
3 Tbsp butter
3 Tbsp flour
2 c low sodium chicken broth
1 c fat free sour cream
7 oz canned green chilies

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a 13 x 9 pan with nonstick spray.
  • 2. Mix chicken and 1 c. of cheese. Roll up in tortillas and place in prepared pan.
  • 3. In a sauce pan, melt butter. Stir in flour and cook for 1 minute. Whisk in broth and continue stirring until smooth. Heat over medium heat until thickened and bubbly.
  • 4. Remove from heat and stir in sour cream and green chilies until well combined. pour over enchiladas and top with remaining cheese.
  • 5. Bake in preheated oven for 22 minutes. Then place under high broil for 3 minutes to brown the cheese. Serve with a lettuce salad.
