Time 1h10m

Number Of Ingredients 11

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (at room temperature)
1/2 cup brown sugar
1/4 cup granulated sugar
2 eggs
2 tablespoons milk
1 teaspoon vanilla
2-3 very ripe bananas (peeled and well mashed with a fork)

Steps:

  • Preheat your oven to 350 degrees F. Coat a loaf pan with non-stick cooking spray.
  • In a medium mixing bowl, combine the flour, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat together the butter and sugars until fluffy, about 1 minute. Add the eggs, milk, and vanilla. Mix until smooth, scraping the side of the bowl as needed.
  • Add the flour mixture to the butter mixture in two additions, mixing until just combined after each addition.
  • Add in the bananas and mix until combined.
  • Pour the batter into your prepared loaf pan. Use a spatula to spread to the into an even layer.
  • Bake for 1 hour to 1 hour 15 mins, or until a toothpick inserted in the center comes out clean. (I start checking my bread at the 1 hour mark, every 5 minutes.)
  • Remove from the oven and let cool until cool enough to handle.
  • Serve warm or room temperature. We like our bread plain or slathered in butter.

HOOTENHOLLER WHISKEY QUICK BREAD

Hootenholler Whiskey Quick Bread image

This recipe is adapted from the "I Hate to Cook Book" by Peg Bracken, the 1960 iconic bestseller that had the nerve to say then what so many women felt: They liked cooking fine, as long as they didn't have to cook all the time. As her recipes were meant to do, this bread comes together fast, and you don't need to make a special trip to the grocery store for it. It will also keep for a long time, especially if it is soaked with a little whiskey every now and then. The first step is up to you.

Time 2h30m

Yield Makes 1 loaf

Number Of Ingredients 13

1/4 cup bourbon, plus more for you
8 tablespoons unsalted butter, plus more for greasing the pan
1 cup flour, plus more for dusting
1 cup sugar
3 large eggs, beaten
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon grated nutmeg
1/4 cup milk
1/4 cup molasses
1/4 teaspoon baking soda
1 cup raisins
1 cup chopped pecans or walnuts

Steps:

  • First, take the bourbon out of the cupboard and have a small snort for medicinal purposes. Now, preheat the oven to 300 degrees. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan. Using a mixer, cream the butter and sugar until light and fluffy. With the mixer on low, add the beaten eggs, a little at a time.
  • Mix together the flour, baking powder, salt and nutmeg, and add to the batter. Then beat in the milk. Combine the molasses and baking soda and mix into the batter. To help prevent the raisins and pecans from sinking, dust them with flour, shaking off excess. Mix them, along with the bourbon, into the batter until combined. Transfer to the loaf pan and bake until a toothpick inserted into the center comes up clean, 1 3/4 to 2 hours.

Time 1h

Yield 15

Number Of Ingredients 14

butter-flavored cooking spray (such as Pam®)
3 very ripe bananas
1 tablespoon vanilla extract
1 tablespoon banana extract
1 ½ fluid ounces whiskey and honey liqueur (such as Jack Daniel's Tennessee Honey®)
1 cup butter
2 cups white sugar
4 eggs
3 tablespoons bacon drippings
5 slices cooked bacon
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray 5 mini loaf pans with cooking spray.
  • Place bananas, vanilla extract, banana extract, and whiskey-honey liqueur into the work bowl of a stand mixer and mix well. Transfer banana mixture to a bowl. Beat butter, sugar, eggs, and bacon drippings in a clean bowl using stand mixer until butter mixture is fluffy, about 3 minutes. Stir banana mixture into butter mixture.
  • Place bacon slices into a food processor and pulse until finely chopped. Mix bacon into moist ingredients. Combine flour, baking soda, salt, and baking powder on a large paper plate and use paper plate as a funnel to add flour mixture to moist ingredients in mixer bowl; beat until batter is thoroughly combined. Pour batter into prepared mini loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the middle of a loaf comes out clean or with moist crumbs, about 45 minutes.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and moister your bread will be.
  • Don't overmix the batter: Overmixing can make your bread tough.
  • Let the bread cool completely before slicing: This will help to prevent it from crumbling.
  • Store the bread in an airtight container at room temperature for up to 3 days: You can also freeze the bread for up to 2 months.

Conclusion:

Whiskey and bacon banana bread is a delicious and unique twist on a classic recipe. The whiskey adds a subtle smokiness and the bacon adds a savory touch. This bread is perfect for breakfast, brunch, or dessert. It's also a great gift for friends and family. Whether you're a fan of whiskey, bacon, or banana bread, you're sure to love this recipe.
