2 apples (1 pound), peeled, cored, and cut into 1-inch pieces

Steps:

2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 cup port wine
1/4 teaspoon Mexican cinnamon

2 cups chicken stock
2 tablespoons cold unsalted butter
1/4 cup fresh or frozen cranberries, coarsely chopped

I did retain the pecan topping but you can probably cut it back to 1/2 cup of brown sugar. Enjoy!

5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup unsalted butter, at room temperature

  • Preheat the oven to 375 degrees F.

1/8 teaspoon cayenne pepper
1/16 teaspoon a generous pinch ground cloves
1/2 teaspoon kosher salt (plus more to taste)
1/3 cup chopped raw pecans
1/3 cup pure maple syrup

Steps:

  • Place a large pot over medium heat. Add the sweet potatoes, coconut milk, 2 tablespoons maple syrup, cinnamon, nutmeg, cayenne, cloves, and 1/2 teaspoon kosher salt to the pot. Stir to combine.

4 sweet potatoes
1/2 cup brown sugar
1/4 cup butter, softened
1/4 cup milk
1 teaspoon fresh thyme
1/2 teaspoon salt
1/4 teaspoon pepper
4 anaheim chilies, roasted

Steps:

  • Peel and dice potatoes, place in large saucepan. Add enough water to cover and bring to a coil. Reduce hat and simmer for 10-15 minutes until tender.
  • Place potatoes in large bowl. Beat until smooth. Add all remaining ingredients except chiles. Fold in until butter is melted. Fold in chiles.
  • To roast chilies, line broiler pan rack with foil & cut holes in foil. Cut chiles in half and remove seeds. Place cut side down on foil-lined pan. Broil 4-6 inches from heat for 8-10 minutes until skims are charred. Place chiles in paper bag for 10 minutes. Peel and discard skins. Coarsely chop chiles.

4 jalapeno peppers, seeded and finely minced
1/4 cup maple syrup
Salt and freshly ground black pepper to taste

Steps:

  • Place the potato cubes in a large, heavy saucepan, cover with water, bring to a boil and cook until tender, 15 to 20 minutes. Drain.
  • Dry the saucepan, and melt the butter in it. Add the jalapenos, and saute for a minute or so, until they soften.

2 tablespoons sour cream

2 chipotle chiles in adobo, minced and mashed to a paste
