1/4 cup plus 2 tablespoons dried flaked unsweetened coconut, divided

1 cup wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
egg substitute, equal to one egg (Ener-G is good)
1/2 cup brown sugar
1/3 cup vegetable oil
1 cup applesauce
1/2 cup soymilk or 1/2 cup rice milk
2 teaspoons sugar
1/4 teaspoon cinnamon
