WHEAT GERM AND CORNMEAL MUFFINS
I have a muffin tin with square cups in it and the bottoms have little metal inserts that come out. I decided to use this pan to make square muffins for a change. These muffins are light and fluffy but have a bit of a crunch from the cornmeal. You could add some nuts or raisins to these if you wish.

Steps:
- Preheat oven to 425 degrees F. In large bowl, combine flour, wheat germ, baking powder, baking soda, salt, cinnamon and nutmeg. In medium bowl, beat egg with brown sugar, oil, applesauce and soy milk. Mix with dry ingredients just until evenly moistened. Spoon into muffin tins. Mix 2 teaspoons of sugar and 1/4 teaspoon cinnamon and sprinkle on top of muffins. Bake for 15-17 minutes.
Tips:
- For a crispy muffin top, mix a tablespoon of white or brown sugar with a teaspoon of cinnamon and sprinkle over the muffin batter before baking.
- To make sure your muffins are cooked through, insert a toothpick or skewer into the center of one muffin. If it comes out clean, the muffins are done.
- For a healthier muffin, use whole wheat flour instead of all-purpose flour. You can also add some chopped nuts, seeds, or dried fruit to your batter.
- If you don't have wheat germ on hand, you can substitute it with an equal amount of ground flaxseed.
- For a gluten-free muffin, use a gluten-free flour blend instead of all-purpose flour.
Conclusion:
Wheat germ muffins are a delicious and healthy breakfast option that are easy to make and can be customized to your liking. Whether you prefer them sweet or savory, crispy or soft, there's a wheat germ muffin recipe out there for everyone.
