MOMMA'S WHEAT GERM COOKIES
Good Cookies!! You'll be giving out this recipe forever!!! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven. This allows them to "flatten" and firm up, also make sure you use rolled oats, not instant! Please don't let all the ingredients scare you away from this recipe.

WHEAT GERM MEATBALLS
Awesome meatballs that are actually sort of healthy! Well...they have fiber... All the amounts are approximate to give you an idea of the ratios. Normally I just wing it until the "pre balled" meat lump looks like a lump of bread dough and is no longer excessively sticky yet not dry.

Steps:
- Pre-heat the oven to 350 degrees.
- Mix together everything except the wheat germ. It should be sticky and not stay together. Use your hands!
- Add the wheatgerm and mix it up. It should look like bread dough. It should hold together, but not be dry and hard.
- Roll into balls and place in an oil sprayed Pyrex.
- At this point you can brush with some more bbq sauce but it is not necessary.
- Cook for 45 min or until they are finished to your liking.
- YUM!
VEGAN MEATBALLS(ISOLATED SOY FREE)
These vegan meatballs are isolated soy free. They are full of flavor! They make a great companion to your favorite spaghetti dish or try them in a meatball sub. Three large meatballs only have 8 grams of fat, not bad when you consider they can be eaten with pasta and tomato sauce. From My Vegan Cookbook.

Steps:
- Mix ingredients together in a bowl.
- Preheat oven to 300 degrees.
- Measure out 2 tablespoons of mixture for each meatball and roll into a ball with your hands. Spray cooking sheet and place meatballs on it. Place into oven and cook 15 minutes on one side and roll over and cook 15 minutes on the other side.
- After they are out of the oven, let stand for about 10 minutes to allow them to firm up.
- NOTE:.
- If making Recipe#511822-Vegan Italian Meatball Soup, the meatballs need to be prepared differently. Omit 1 Tablespoon of the olive oil and replace it with 1 tablespoon of water. We want to make the meatballs smaller for this soup so instead of making the meatballs with 2 tablespoons for each meatball measure them out using 1/2 a tablespoon. Also, cook 10 minutes on each side instead of 15 minutes like the recipe originally states.

THE BEST MEATBALLS
I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Steps:
- Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

RUTH'S GERMAN BOILED MEATBALLS AND GRAVY
This is my Mom's version of German meatballs. Her mother used to make these but of course never used a recipe - she never even had a stove - always used a coal burning stove! Mom kept working on it and used a few more conventional ingredients and came up with this recipe. She always served it over extra-wide egg noodles.

- Batter may be lumpy.
- Fold in one cup wheat germ.

Tips:
- Soak the wheat germ in water before using. This will help to soften the germ and make it easier to digest.
- Use a food processor to grind the wheat germ into a fine powder. This will help to ensure that the germ is evenly distributed throughout the meatballs.
- Add some chopped vegetables to the meatballs. This will help to add flavor and nutrients to the meatballs.
- Bake the meatballs in the oven instead of frying them. This will help to reduce the amount of fat in the meatballs.
- Serve the meatballs with a healthy sauce. This could be a tomato sauce, a yogurt sauce, or a tahini sauce. Serving with a healthy sauce will help to add flavor and moisture to the meatballs.
Conclusion:
Wheat germ meatballs are a healthy and delicious alternative to traditional meatballs. They are easy to make and can be enjoyed by people of all ages. By following the tips above, you can make the best wheat germ meatballs possible. Enjoy!
