Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup wheat berries
1 1/2 cups water
2 tablespoons Dijon mustard
1 teaspoon honey
1 sweet apple, chopped
1 celery rib, chopped
1/4 cup raisins
1/3 cup nonfat yogurt
2 tablespoons fresh lemon juice
1/2 cup walnuts, chopped

Steps:

  • Add wheat berries and water to saucepan and bring the mixture to a boil, lower the heat and simmer covered until the wheat berries are tender but still chewy in texture, about 15 minutes. Set aside to cool.
  • Toss cooled wheat berries and remaining ingredients together in bowl and serve.

Tips:

  • Soak the wheat berries overnight or for at least 8 hours before cooking. This will help to reduce the cooking time and make the berries more digestible.
  • Cook the wheat berries in plenty of water, about 3 cups of water to 1 cup of wheat berries. This will help to prevent the berries from sticking together.
  • Bring the water to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the berries are tender but still have a slight bite.
  • Drain the wheat berries and rinse them with cold water. This will help to stop the cooking process and remove any excess starch.
  • Fluff the wheat berries with a fork before using. This will help to separate the berries and make them lighter and airier.
  • Wheat berries can be used in a variety of dishes, including salads, soups, stews, and pilafs. They can also be ground into flour and used to make bread, pasta, and other baked goods.
