Time 1h30m

Yield 6 servings

Number Of Ingredients 9

1 cup hard winter wheatberries
Kosher salt
1 cup finely diced red onion (1 onion)
6 tablespoons good olive oil, divided
2 tablespoons balsamic vinegar
3 scallions, minced, white and green parts
1/2 red bell pepper, small diced
1 carrot, small diced
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
  • Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
  • In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.

1 cup wheat, spelt, or rye berries (available at natural foods stores)
1/2 cup diced Feta (about 2 ounces)
1/2 cup thinly sliced red onion
1/2 cup julienne strips of seedless cucumber
5 tablespoons olive oil
1/4 cup julienne strips of drained bottled roasted red pepper
1/4 cup mixed minced fresh herbs such as parsley, mint, and dill plus herb sprigs for garnish
2 tablespoons fresh lemon juice, or to taste
1 tablespoon red-wine vinegar
1 tablespoon chopped pitted brine-cured black olives
1 teaspoon ground cumin
1 garlic clove, minced dried hot red pepper flakes to taste

Steps:

  • In a kettle of boiling salted water cook the wheat berries for 1 hour, or until they are tender, and drain them. In a large bowl stir together the wheat berries, the Feta, the onion, the cucumber, the oil, the roasted pepper, the minced herbs, the lemon juice, the vinegar, the olives, the cumin, the garlic, the red pepper flakes, and salt to taste and garnish the salad with the herb sprigs.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your salad.
  • Cook the wheat berries according to the package directions. They should be tender but still have a little bit of a bite to them.
  • Let the wheat berries cool completely before assembling the salad. This will help prevent the salad from getting watery.
  • Dice the vegetables into small, even pieces. This will help them cook evenly and distribute their flavor throughout the salad.
  • Use a good quality olive oil. This will add a rich, fruity flavor to the salad.
  • Season the salad to taste with salt and pepper. You can also add other spices or herbs, such as cumin, coriander, or oregano.

Conclusion:

Wheat berry salad with olives and garlic is a delicious and healthy dish that is perfect for lunch or dinner. It is also a great way to use up leftover wheat berries. This salad is packed with flavor and nutrients, and it is sure to please everyone at your table.
