Number Of Ingredients 9

1 cup hard winter wheatberries
Kosher salt
1 cup finely diced red onion (1 onion)
6 tablespoons good olive oil, divided
2 tablespoons balsamic vinegar
3 scallions, minced, white and green parts
1/2 red bell pepper, small diced

Steps:

  • Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
  • Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
  • In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.

WHEAT BERRY & BARLEY SALAD

Wheat Berry & Barley Salad image

This recipe comes from Central Market. It has very bright, bold flavors and the chewy texture of the wheat berries makes this salad very interesting and different. I like to add fresh basil to the salad because it always goes great with mozzarella and tomatoes! This recipe makes a lot, the grains really expand! Unless I'm bringing it to a party I like to cut the recipe in half.

Time 1h20m

Yield 8-10 serving(s)

Number Of Ingredients 11

1 cup wheat berries
1 cup pearl barley
1 small red onion, finely diced
3 -4 cloves roasted garlic, mashed
1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
6 green onions, thinly sliced
1 (10 ounce) bag frozen corn, thawed
1/2 lb smoked mozzarella cheese, diced (or fresh mozzarella or feta)
1 pint cherry tomatoes, halved
salt & freshly ground black pepper

Steps:

  • Bring a pot of salted water to a boil. Add wheat berries. Return to a boil, then reduce heat to a simmer and cook for 30 minutes. Add barley and continue to simmer for another 30-40 minutes, or until grains are tender, but still firm. Meanwhile, combine red onion, garlic, vinegar and oil in a large bowl. Drain grains and add to onion mixture. Toss well and cool. Add green onions, corn, mozzarella, tomatoes and salt and pepper. Toss well. Salad may be made 1 day ahead and chilled, covered. Bring to room temperature before serving.

Tips:

  • To save time, use pre-cooked wheat berries and barley. They are available in most grocery stores.
  • If you don't have fresh herbs, use dried herbs instead. Use about 1/3 of the amount of dried herbs as you would fresh herbs.
  • To make the salad more flavorful, marinate the vegetables in the dressing for at least 30 minutes before serving.
  • This salad is best served fresh, but it will keep in the refrigerator for up to 3 days.

Conclusion:

Wheat berry and barley salad is a delicious and healthy side dish or main course. It is packed with nutrients and fiber, and it is a great way to use up leftover grains. This salad is also very versatile, so you can easily customize it to your liking. Add your favorite vegetables, herbs, and nuts, and you have a delicious and satisfying salad that is perfect for any occasion.
