Tips:
- Use fresh, ripe tomatoes for the best flavor. Roma tomatoes are a good choice, as they are meaty and have a low water content.
- Roast the tomatoes before making the sauce. This will help to concentrate the flavors and give the sauce a smoky depth of flavor.
- Use a variety of spices to create a complex flavor profile. Common spices used in West Virginia hot dog sauce include celery salt, garlic powder, onion powder, and black pepper.
- Simmer the sauce for at least 30 minutes to allow the flavors to meld. The longer you simmer the sauce, the better it will taste.
- Taste the sauce before serving and adjust the seasonings as needed. You may want to add more spices, vinegar, or sugar to taste.
