Welsh rabbit with tomato is a classic British dish that is typically served as a savory breakfast or brunch dish. It is made with a creamy cheese sauce, tomatoes, and sometimes other ingredients such as Worcestershire sauce, mustard, or cayenne pepper. The cheese sauce is made by melting butter and flour together, then adding milk and cheese. The tomatoes are typically diced or chopped and added to the sauce. Welsh rabbit can be served on its own or with toast, eggs, or bacon.

This article includes two recipes for Welsh rabbit with tomato. The first recipe is a classic version of the dish, made with cheddar cheese, tomatoes, and Worcestershire sauce. The second recipe is a vegetarian version, made with tofu instead of cheese. Both recipes are easy to make and can be ready in under 30 minutes.

The first recipe, Classic Welsh Rabbit with Tomato, is made with sharp cheddar cheese, diced tomatoes, Worcestershire sauce, dry mustard, cayenne pepper, and salt. The sharp cheddar cheese provides a bold flavor to the sauce, while the tomatoes add a pop of freshness and acidity. The Worcestershire sauce, dry mustard, and cayenne pepper add a savory and slightly spicy flavor to the dish.

The second recipe, Vegetarian Welsh Rabbit with Tomato, is made with extra-firm tofu, diced tomatoes, nutritional yeast, Dijon mustard, garlic powder, onion powder, and salt. The extra-firm tofu provides a firm and slightly chewy texture, while the tomatoes add a pop of freshness and acidity. The nutritional yeast, Dijon mustard, garlic powder, and onion powder add a savory and slightly tangy flavor to the dish.

Both recipes are served on toasted bread or English muffins, and can be garnished with chopped parsley or chives.
