Tips:

  • To make the perfect crispy catfish, use a combination of cornmeal, flour, and seasonings for the coating. This will give the fish a delicious crunch and flavor.
  • For the baked potato sticks, choose potatoes that are firm and starchy, such as Russet potatoes. This will help them get crispy in the oven.
  • Be sure to preheat the oil before frying the catfish. This will help prevent the fish from sticking to the pan and will also help it cook evenly.
  • Don't overcrowd the pan when frying the catfish. This will also help prevent the fish from sticking together and will help it cook evenly.
  • To make sure the catfish is cooked through, use a meat thermometer to check the internal temperature. The fish should be cooked to an internal temperature of 145 degrees Fahrenheit.
  • Serve the catfish and potato sticks immediately with your favorite dipping sauce, such as tartar sauce or ranch dressing.
