This is very tasty and pretty quick too. I have used brown rice in place of the white rice and that works just as well. Not always for your Asian dinners, this goes well with traditional pork and chicken dishes too. This is adapted from Gourmet magazine, Jan. 1999.

1 large carrot
1 celery rib
4 scallions
half an 8-ounce can water chestnuts
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 teaspoon Worcestershire sauce
cayenne to taste
3 cups cooked white rice (preferably medium-grain)

Tips:

  • Choose fresh water chestnuts. Look for water chestnuts that are firm and white, with no blemishes or bruises. Avoid any that are soft or have brown spots.
  • Peel the water chestnuts before using. To peel a water chestnut, use a sharp knife to make a shallow cut around the circumference of the chestnut. Then, use your fingers to peel off the skin.
  • Slice the water chestnuts thinly. This will help them cook evenly and absorb the flavors of the other ingredients.
  • Cook the water chestnuts over medium heat. This will help them retain their texture and prevent them from becoming mushy.
  • Do not overcook the water chestnuts. They should be tender but still slightly crunchy.
  • Season the water chestnuts with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the water chestnuts as a side dish or appetizer. They can also be used in salads, soups, and stir-fries.

Conclusion:

Water chestnuts are a versatile ingredient that can be used in a variety of dishes. They are a good source of fiber, vitamins, and minerals, and they have a slightly sweet and nutty flavor. When cooked properly, water chestnuts are tender but still slightly crunchy. They can be used as a side dish, appetizer, or ingredient in salads, soups, and stir-fries. With their unique flavor and texture, water chestnuts are a great way to add interest and variety to your meals.
