1/2 cup mayonnaise or salad dressing
1 teaspoon wasabi powder or prepared horseradish
2 pounds tuna steaks, 3/4 to 1 inch thick
1/2 cup vegetable oil
1/3 cup soy sauce
2 tablespoons packed brown sugar
2 teaspoons sesame oil
2 teaspoons grated gingerroot
2 cloves garlic, finely chopped
2 teaspoons sesame seed, toasted if desired

Steps:

  • In small bowl, mix all Wasabi Aioli ingredients. Cover and refrigerate until serving.
  • If tuna steaks are large, cut into 8 serving pieces. In shallow glass or plastic dish or resealable food-storage plastic bag, mix vegetable oil, soy sauce, brown sugar, sesame oil, gingerroot and garlic. Add tuna; turn to coat with marinade. Cover dish or seal bag and refrigerate, turning once, at least 2 hours but no longer than 4 hours.
  • Heat coals or gas grill for direct heat. Remove tuna from marinade; reserve marinade. Cover and grill tuna about 4 inches from medium heat 10 to 15 minutes, brushing 2 to 3 times with marinade and turning once, until tuna flakes easily with fork. Discard any remaining marinade. Sprinkle tuna with sesame seed. Serve with Wasabi Aioli.

1/2 cup wasabi
1 tablespoon honey
2 cups orange juice
1/2 cup vegetable stock
2 tablespoons red curry paste
1/2 cup white wine
1 shallot chopped
2 cloves garlic
1/3 cup rice wine vinegar
1/2 cup safflower oil or vegetable oil
Kosher salt and pepper to taste
4 (6-ounce) tuna fillets
Butter and water
2 cups Jasmine rice, cooked
1 tablespoon vegetable oil
1 cup canned whole straw mushrooms, drained
1 cup lychee nuts, quartered
1 cup wakame seaweed (rehydrated)
2 carrots, peeled and shaved into strips with peeler

  • Garnish: long chives
  • In a mixing bowl, mix together wasabi and honey. Wasabi mixture should be a pourable consistency. Transfer into a squirt bottle and place aside.
  • In a saucepan, reduce orange juice to a sugar syrup, be careful not to burn. Add vegetable stock, red curry paste, white wine, shallots and garlic and bring to a boil. Reduce by half. Transfer contents in a blender. Add rice wine vinegar and puree slowly adding the safflower oil until emulsified. Transfer to a squirt bottle. Set aside.
  • Season tuna fillets with Kosher salt and black pepper (using 7/8 salt and 1/8 pepper) then grill tuna fillet to desired doneness.
  • In a saute pan emulsify butter and water, add jasmine rice and heat.
  • In another saute pan over high heat, heat oil and saute straw mushrooms, lychee nuts. On a serving plate arrange seaweed in a circle. Place rice in center on top of seaweed, carrot strips on top of rice keeping in mind you want to see carrots. Sprinkle around the edge of plate straw mushroom-lychee nut mixture. Place tuna fillet on top of carrots, squirt Thai vinaigrette on top of tuna and then squirt the wasabi glaze on top of Thai vinaigrette. Garnish with long chives.

1 large garlic clove, minced
1 teaspoon fresh ginger, minced

Steps:

  • Wasabi Mayonnaise:.
  • Mix all ingredients together in small bowl.
  • Cover with plastic wrap and chill until flavors blend, at least 10 minutes.
  • Tuna Burgers:.
  • With your knife, using a rocking motion, chop tuna until it is coarsely ground into pieces about 1/8 inch each.
  • In medium size bowl mix tuna with garlic, ginger, salt, and pepper (to taste). Divide mixture into 4 portions approximately 5 ounces each. Using your hands press into patties about 1 inch thick.
  • Chill patties in refrigerate for at least 15 minutes.
  • Preheat grill until very hot (about 15 minutes). Leave all burners on high.

1 (13 1/2 ounce) can unsweetened coconut milk
1 cup unsweetened flaked coconut
1 tablespoon wasabi powder
kosher salt
fresh ground black pepper

Steps:

  • Whisk together coconut milk and wasabi powder in a saucepan and let sit for 30 minutes.
  • Toast coconut flakes in the oven set at 350°F for 5 to 15 minutes until golden brown. Keep an eye on them so you don't burn them.

16 large shiitaki mushrooms
2 large sweet red peppers
1 large red onion
8 skewers if using bamboo soak in water
1 1/2 c sherry soy marinade
1 to 2 tsp wasabi paste
SHERRY--SOY MARINADE
1/2 c oil canols, vegetable or vpeanut
1/2 c dry sherry
1/4 c soy sauce, low sodium
2 Tbsp sesame oil
2 Tbsp peeled chopped ginger root
2 Tbsp minced garlic
1/4 c chopped cilantro
3 scallions sliced
3 Tbsp rice wine vinegar
2 Tbsp ground cumin
1 Tbsp achiote paste optional

Steps:

  • 1. SHERRY--SOY MARINADE
  • 2. Combine all ingredients in a saucepan and heat to just below the boil. Remove from the heat. Cool. This marinade may be stored in a refrigerator up to 2 weeks. Use to marinate chicken, shrimp, or pork for several hours before grilling. Yield: 1 1/2 cups
  • 3. KEBABS
  • 4. Cut the tuna into 24 equal-size cubes. Quarter the mushrooms. Cut the peppers and onion into 1/2-inch squares. Divide the ingredients equally among the 8 skewers, alternating squares of vegetable and tuna. Pour 1 cup of the Sherry-Soy Marinade over the kebabs and marinate, refrigerated, 2 to 3 hours.
  • 5. Dissolve the wasabi in the remaining 1/2 cup marinade to make a spicy dipping sauce to serve at the table with the grilled tuna.
