WARM MARINATED OLIVES

Heating olives with herbs, spices, and oil is a quick way to elevate the humble pantry staple to star appetizer status.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 15m

Yield Serves 8 to 10

Number Of Ingredients 6

1 tablespoon extra-virgin olive oil
2 dried red chiles, such as chiles de árbol
1 rosemary sprig, broken into 1 1/2-inch pieces
1/4 teaspoon fennel seeds, crushed
1/4 teaspoon coriander seeds, crushed
2 cups mixed olives, patted dry

Steps:

  • Heat oil, chiles, rosemary, and fennel and coriander seeds in a medium skillet over medium heat until fragrant, about 2 minutes. Reduce heat to low and add olives; stir to coat. Heat mixture, stirring occasionally, until warmed, about 10 minutes. Serve warm.

Tips:

  • Choose the Right Olives: Select firm and plump olives with no blemishes or bruises. Avoid olives that are overly wrinkled or soft.
  • Use a Variety of Spices: Experiment with different spices to create unique flavor combinations. Common choices include cumin, coriander, paprika, and chili powder.
  • Don't Overcrowd the Pan: When warming the olives, make sure not to overcrowd the pan. This will prevent them from cooking evenly and may cause them to become mushy.
  • Keep an Eye on the Heat: Warm the olives over medium-low heat, stirring frequently. This will help prevent them from burning.
  • Serve Immediately: Spiced olives are best served immediately, while they are still warm and flavorful. They can be enjoyed as an appetizer, snack, or side dish.

Conclusion:

Warmed spiced olives are a delicious and easy-to-make appetizer or snack. With a variety of spices to choose from, you can customize the flavor to your liking. Whether you prefer a mild or spicy kick, these olives are sure to be a hit. So next time you're looking for a quick and tasty snack, give this recipe a try!
