Steps:
- 1. Boil spinach in salty water. Drain and set aside. In a saucepan lightly saute garlic and a little ham base in olive oil, (do not brown garlic). Garlic must stay white. Brown the sausage in a different pan to drain the fat away. If you don't mind the fat, then add it to the garlic and ham base (or pork bullion crumbles). Add the drained spinach and let coat well about 10 minutes. Adjust for taste with salt and pepper. Serve with your favorite meat. Double or triple the recipe for additional guests. You can use this recipe for other types of green such as collards, turnips, etc. Enjoy! =)
WARM SPINACH AND SAUSAGE SALAD
From the February/March 2006 issue of Everyday with Rachael Ray magazine. This is a simple salad that works as a main course for lunch, dinner or even breakfast. The magazine says that runny eggs make a richer dressing, but this salad tastes great with scrambled or hard-boiled eggs. I love the lemon-tang of the dressing.

Tips and Conclusion
Here are some additional recommended tips:
- Utilize Fresh Spinach: Using fresh, vibrant spinach is key to creating the best salad. The fresher the spinach, the better the flavor and texture.
- Cook Sausage Properly: Ensure the sausage is cooked thoroughly. Undercooked sausage can be unsafe to consume.
- Control the Heat: Be careful with the heat when cooking the sausage. Excessive heat can result in burnt sausage, which will negatively impact the salad's flavor.
- Customize the Dressing: Feel at liberty to adjust the dressing according to your taste preferences. If you enjoy a tangy dressing, increase the vinegar or lemon juice. For a sweeter version, add more honey or maple syrup.
- Serve Warm: This salad is best served warm to allow the flavors to blend harmoniously. However, you can adjust the serving temperature based on your personal preference.
In conclusion, this delectable spinach and sausage salad is a symphony of flavors that effortlessly combines the robustness of cooked sausage, the freshness of vibrant spinach, and the sweetness of caramelized onions. Enhanced with a tangy dressing, it provides a balanced taste experience that is both satisfying and nutritious. Try it out and elevate your culinary repertoire with this delectable dish.
