LEMON VINAIGRETTE POTATO SALAD

Lemon Vinaigrette Potato Salad image

I developed this recipe for a friend who needed a potato salad that could withstand Fourth of July weather. The vinaigrette was a safe and delicious alternative to traditional mayonnaise-based potato salads. I've also substituted fresh thyme for the basil. Any fresh herbs would be great! -Melanie Cloyd, Mullica Hill, New Jersey

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well and are less likely to fall apart when cooked. Avoid using starchy potatoes, such as Russet potatoes, as they tend to become mushy when cooked.
  • Cook the potatoes until they are tender but still slightly firm: Overcooked potatoes will fall apart easily and become mushy. To check if the potatoes are done, insert a fork or knife into the center of a potato. It should go through easily, but the potato should still have a slight resistance.
  • Let the potatoes cool slightly before slicing: This will help to prevent them from breaking apart.
  • Make the vinaigrette while the potatoes are cooking: This will give the flavors time to meld together.
  • Use fresh herbs: Fresh herbs, such as chives, parsley, and dill, will add a bright, flavorful touch to the salad.
  • Serve the salad warm or at room temperature: This is a great side dish for grilled or roasted meats, fish, or poultry.

Conclusion:

This warm potato salad with lemon and chive vinaigrette is a simple, yet delicious side dish that is perfect for any occasion. The combination of tender potatoes, tangy vinaigrette, and fresh herbs makes this salad a refreshing and flavorful addition to any meal. So next time you're looking for a quick and easy side dish, give this warm potato salad a try!
