¾ lb pasta, ((I recommend fusilli or rotini pasta) )
Kosher salt
1 pint cherry tomatoes (halved)
1 bell pepper (any color, cored and chopped)
1 shallot (chopped)
1 cup marinated artichoke hearts (6 ounces)
1/4 cup pitted kalamata olives
6 pepperoncini, (chopped)
6 to 8 ounces salami, (sliced into bite size pieces )
6 ounces mozzarella cheese, (torn (or mozzarella cheese balls))
½ cup packed chopped fresh parsley
½ cup packed chopped fresh basil leaves
¼ cup olive oil
2 tablespoons white wine vinegar
2 garlic cloves, (minced)
1 teaspoon dried oregano
½ to 1 teaspoon crushed red pepper flakes
Kosher salt and black pepper

Steps:

  • Cook the pasta in boiling water according to package instructions until the pasta is cooked to al dante (don't forget to salt your water). Drain
  • In a large bowl, mix the pasta with the tomatoes, chopped veggies, artichoke hearts, olives, pepperoncini, salami, mozzarella, and fresh herbs.
  • In a small bowl or measuring cup, mix the dressing ingredients together.

8 cups romaine lettuce (washed and torn)
1 large tomato (diced)
2 cups cherry or grape tomatoes ( or 2 large ripe tomatoes)
¼ red onion (thinly sliced)
8 ounces fresh mozzarella cheese (diced)
3 tablespoons torn fresh basil leaves (optional)
balsamic glaze for drizzling (optional)
½ cup olive oil
¼ cup balsamic vinegar
1 teaspoon sugar
1 teaspoon Dijon mustard
½ teaspoon garlic powder
salt and pepper

Steps:

  • If using grape or cherry tomatoes, cut them in half. If using larger tomatoes, cut them into bite sized pieces.

1 English cucumber, quartered and cut into 1/4-inch slices
1 small green pepper, chopped

When I eat it on its own, I sometimes add about a cup of any chunked, cold sausage (I suggest pepperoni or a lighter summer sausage). Any pasta is fine, but I like the orzo's size.

1 cup uncooked orzo pasta
1 ½ cups cubed fresh mozzarella cheese
2 fresh plum tomatoes, seeded and cut into bite-size pieces

4 plum tomatoes, cut in 1/2 and seeded
3 tablespoons olive oil

One 5-ounce box baby arugula
One 8-ounce package baby mozzarella balls, drained

  • Preheat the oven to 450 degrees F.
  • Add the tomatoes to a shallow 2-quart casserole dish in a single layer.

1 (6 inch) fat-free whole wheat pita bread
2 teaspoons Smart Balance light butter spread, divided
3/4 cup onion (halved lengthwise, thinly sliced crosswise)
1 cup wild mushroom (assorted such as crimini, oyster, chanterelle, and stemmed shiitake cut into bite-size pieces)
2 garlic cloves (minced)
1/4 tablespoon shallot (minced)
1/4 cup dry white wine
1 tablespoon fresh basil (Chiffanod)
3 pieces sun-dried tomatoes (chopped)
2 ounces reduced-fat mozzarella cheese

Steps:

  • Preheat a Pizza Stone in a 450-degree oven at least 30 minutes before baking.
  • Melt 1 teaspoons butter with 2 tablespoons olive oil in heavy large skillet over medium heat. Add onions and sauté until golden, about 15-20 minutes. Season with salt and pepper to taste and remove from pan and set aside.
  • Melt remaining teaspoons butter with 1 teaspoon olive oil over medium-high heat. Add mushrooms, garlic, and shallot. Sauté 4 minutes. Add wine and simmer until almost all liquid is absorbed, stirring frequently, about 7 minutes move to 1 side of the pan. In the other side of the pan add Sun Dried Tomato and basil and cook an additional 3 minutes.
  • Lightly brush whole wheat pita with olive and garlic oil. Sprinkle with 1oz Reduced Fat Mozzarella cheese. Scatter onions over cheese. Scatter mushrooms over onions. Scatter Sun dried Tomato and Basil over mushrooms and top with remaining 1 oz Reduced Fat Mozzarella cheese on top.
  • Position Pita in the center of the pizza stone and Bake for 10 minutes or until crust and cheese is a golden brown. Using large spatula, carefully transfer pizzas to cutting board. Let rest 1 minute. Slice into wedges and serve.
