Categories     Gluten-Free Recipes

Yield Makes 3/4 cup

Number Of Ingredients 6

1 cup dry white wine
1/2 cup champagne vinegar, or other mild-flavored vinegar such as rice-wine vinegar
2 large egg yolks
1/2 cup extra-virgin olive oil
1 tablespoon Dijon mustard
Coarse salt and freshly ground pepper

Steps:

  • Combine wine and vinegar in a small saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium, and simmer until liquid is reduced by three-quarters, about 12 minutes.
  • Set a heat-proof bowl, or the top of a double boiler, over a pan of simmering water. Transfer the liquid to the bowl. Lightly beat egg yolks, and whisk them into the wine reduction, whisking constantly until the mixture is thick enough to form ribbons, about 3 minutes.
  • Remove from heat, and slowly add olive oil, pouring in a steady stream and whisking constantly until all the olive oil is incorporated. Whisk in mustard, and season with salt and pepper. Serve immediately.

Categories     side-dish

Time 55m

Yield 3 to 4 servings

Number Of Ingredients 18

1 1/2 cups black lentils
2 bay leaves
2 cloves garlic, smashed
1 stalk celery
1 small bundle fresh thyme
1/2 carrot, peeled
1/2 fennel bulb
1/2 red onion, peeled, root end left on
Kosher salt
Olive oil, for sauteing
1/2 carrot, finely diced
1/2 fennel bulb, finely diced, plus fennel fronds, for garnish
1/2 onion, finely diced
1 clove garlic, smashed
1/2 cup red wine vinegar
3 tablespoons whole-grain mustard
Kosher salt
1 tablespoon chopped fresh parsley

Steps:

  • For the lentils: In a large saucepan, combine the lentils, bay leaves, garlic, celery, thyme, carrot, fennel, red onion and a good amount of salt. Add water to the pan until it covers the ingredients by about 2 inches. Bring the water to a boil over medium heat, and then reduce the heat to a simmer. Cook until the lentils are soft, 20 to 30 minutes. Ladle off 1 cup of the lentil-cooking water and reserve. Remove all the vegetables and aromatics from the lentils and discard. Drain the lentils.
  • For the warm salad: Heat a large saute pan with enough olive oil to coat the pan. Add the diced carrots, fennel and onions and sweat the vegetables about 5 minutes. Add in the garlic and saute 1 minute more. Add in the lentils, red wine vinegar and mustard. Pour in a couple tablespoons of the reserved cooking liquid and cook down for a couple minutes. Season with salt and garnish with chopped parsley and fennel fronds.

1/4 cup French's Classic Yellow Mustard
1/4 cup honey, or to taste
1 to 2 teaspoons smoked paprika, or to taste
1 to 2 teaspoons Zatarain's Creole Seasoning, or to taste
1/2 teaspoon kosher salt, optional and to taste
1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons French's Classic Yellow Mustard
1 teaspoon to 1 1/2 tablespoons chili or hot sauce (I use sriracha), or to taste
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper, or to taste
1/3 cup French's Classic Yellow Mustard
3 to 4 tablespoons olive oil
3 tablespoons apple cider vinegar
2 tablespoons fresh parsley, minced (or substitute with green onions, chives, basil, cilantro, dill, etc.)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons granulated sugar, optional and to taste
1/2 cup mayonnaise
2 tablespoons French's Classic Yellow Mustard
2 tablespoons lime juice
3 to 5 cloves garlic, minced or finely pressed
1 tablespoon chili garlic sauce, or to taste
1 teaspoon to 1 1/2 tablespoons sriracha, or to taste
1 teaspoon honey, optional and to taste
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh cilantro, optional
1/4 cup olive oil
1/4 cup honey
1/4 cup French's Classic Yellow Mustard
3 tablespoons apple cider vinegar
3/4 teaspoon kosher salt, or to taste
3/4 teaspoon freshly ground black pepper, or to taste

Steps:

  • Smoky Mustard Dipping Sauce - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. To make the grilled vegetables that are shown, slice 1 or 2 medium/large zucchini, 1 extra-large yellow summer squash, and 1 extra-large red bell pepper into bite-sized pieces or strips, toss them with 2 tablespoons olive oil, 1 teaspoon salt, and 1 teaspoon pepper. Grill the vegetables over medium-high heat for about 7 minutes, or until as done as desired; flip intermittently to ensure even cooking and serve with Smoky Mustard Dipping Sauce.
  • Comeback Sauce - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. Note - I used 1 1/2 tablespoons and this has a very good kick; start slowly with the chili sauce if you're sensitive to heat and spices.
  • Herbed Mustard Vinaigrette - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments.
  • Spicy Garlic Mustard Marinade - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. Note - if you are sensitive to heat and spices, you may wish to initially halve the amounts of chili garlic sauce and sriracha, taste, and work up from there if desired. To make the grilled chicken that is shown, add 1 to 1.25 pounds boneless skinless chicken breast tenders to a large ziptop plastic bag, add the Spicy Garlic Mustard Marinade, 2 tablespoons olive oil, seal the bag, squish contents around to distribute the marinade evenly, and place bag in the refrigerator to marinate for at least 30 minutes, or up to 24 hours. Grill the chicken over medium-high heat for about 7 minutes, or until done; flip intermittently to ensure even cooking and serve with additional Spicy Garlic Mustard if desired.
  • Sweet and Sour Mustard Dressing- Combine all ingredients in a small bowl whisk to combine (or add to a small mason jar with a lid, seal, and shake vigorously), taste, and make any necessary flavor adjustments.

MUSTARD VINAIGRETTE

Mustard Vinaigrette image

A generous spoonful of Dijon mustard makes this vinaigrette creamy and tart. Use the dressing with sturdy salad greens like romaine or with softer lettuces like Bibb lettuce or oak leaf. The dressing is too strong to work with baby salad greens or mesclun. It's also great with cooked vegetables like beets or broccoli and with grain salads.

WARM MARINATED OLIVES

Warm Marinated Olives image

Heating olives with herbs, spices, and oil is a quick way to elevate the humble pantry staple to star appetizer status.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 15m

Yield Serves 8 to 10

Number Of Ingredients 6

1 tablespoon extra-virgin olive oil
2 dried red chiles, such as chiles de árbol
1 rosemary sprig, broken into 1 1/2-inch pieces
1/4 teaspoon fennel seeds, crushed
1/4 teaspoon coriander seeds, crushed
2 cups mixed olives, patted dry

Steps:

  • Heat oil, chiles, rosemary, and fennel and coriander seeds in a medium skillet over medium heat until fragrant, about 2 minutes. Reduce heat to low and add olives; stir to coat. Heat mixture, stirring occasionally, until warmed, about 10 minutes. Serve warm.

Tips:

  • For a creamier sauce, use full-fat Dijon mustard. If you prefer a tangier sauce, use a grainy Dijon mustard.
  • Use a good quality olive oil. The flavor of the oil will come through in the sauce, so it's important to use one that you enjoy the taste of.
  • If you don't have white wine vinegar, you can use another type of vinegar, such as red wine vinegar or apple cider vinegar. Just be sure to adjust the amount of vinegar you use to taste.
  • If you want a thicker sauce, you can simmer it for a few minutes until it reduces. You can also add a cornstarch slurry to the sauce to thicken it.
  • Serve the sauce over chicken, fish, or vegetables. You can also use it as a dipping sauce for bread or crackers.

Conclusion:

This warm mustard and olive oil sauce is a delicious and versatile sauce that can be used in a variety of dishes. It's easy to make and only requires a few simple ingredients. The sauce is creamy, tangy, and flavorful, and it's sure to please everyone at the table.
