100g green bean , trimmed
400g can chickpea , drained and rinsed
zest and juice 1 lime
4 tbsp extra-virgin olive oil
½ red chilli , deseeded and finely sliced
½ red onion , sliced into thin wedges
2 ready-roasted peppers from a jar, drained and sliced
100g cherry tomato , halved
large handful rocket
small bunch parsley , chopped
140g halloumi cheese , sliced

Steps:

  • Cook the beans in a pan of boiling water for 3 mins until just tender, adding the chickpeas for the final min of cooking. Meanwhile, make the dressing: in a large bowl, whisk the lime juice and zest with 3 tbsp of the oil and the chilli. Season. Drain the chickpeas and beans and, while warm, toss with the dressing.
  • Pour boiling water over the red onion, leave for 5 mins to soften, then drain and rinse. Add the peppers, tomatoes, rocket, parsley and softened onion to the bean bowl. Toss to coat everything in the dressing, then divide between 2 plates.
  • Heat the remaining oil in a frying pan, add the halloumi slices and fry for about 1 min on each side until golden. Place a few warm halloumi slices on top of each salad and serve.

Time 30m

Number Of Ingredients 9

10-12 baby courgettes, halved lengthways
1 tbsp olive oil
225g block halloumi, thinly sliced (about 16 slices)
1 long shallot, finely chopped
1 red chilli, finely chopped
1 garlic clove, crushed
1 lemon, zested and juiced
2 tbsp capers
3 tbsp olive oil

Steps:

  • Put all the dressing ingredients in a bowl with 1 tbsp cold water and season with a pinch of salt. Mix together and set aside.
  • Put the courgettes in a large bowl and drizzle with the oil. Add a pinch of salt, then toss.

  • Meanwhile, heat a separate large non-stick frying pan and add the halloumi. Cook for a few minutes until golden on both sides.
  • Arrange the courgettes and halloumi on a large plate or platter, then spoon over the dressing.

Tips:

  • Choose fresh, ripe halloumi. Look for halloumi that is firm and white, with no signs of mold or discoloration.
  • Slice the halloumi into thick slices. This will help it to cook evenly.
  • Pan-fry the halloumi until it is golden brown and crispy. This will create a delicious crust on the outside of the halloumi while keeping the inside soft and gooey.
  • Make the chili dressing ahead of time. This will allow the flavors to meld together and develop.
  • Use a variety of greens in your salad. This will add color, texture, and flavor to the dish.
  • Top the salad with crumbled feta cheese, chopped nuts, and fresh herbs. These ingredients will add extra flavor and texture to the salad.

Conclusion:
