HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Number Of Ingredients 6

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

Tips

  • To make sure the tuna is cooked evenly, use a large skillet and don't overcrowd the tuna. Sear the tuna for 1-2 minutes per side, or until it is cooked through.
  • For a spicier curry, add 1-2 teaspoons of cayenne pepper or red pepper flakes to the curry paste.
  • If you don't have curry paste on hand, you can make your own by blending together 1/2 cup of chopped onion, 1/2 cup of chopped garlic, 1/2 cup of chopped ginger, 1/2 cup of chopped lemongrass, 1/2 cup of chopped cilantro, and 1 teaspoon of ground cumin.
  • To make the curry more flavorful, use coconut milk instead of chicken broth. Coconut milk will add a rich, creamy flavor to the curry.
  • Serve the curry with rice, quinoa, or naan bread. You can also add a side of yogurt or raita to cool down the heat of the curry.

Conclusion

Warm curried tuna is a quick and easy weeknight meal that is packed with flavor. The curry paste adds a delicious depth of flavor to the tuna, and the coconut milk makes the curry rich and creamy. Serve the curry with rice, quinoa, or naan bread, and enjoy!
