WARM CABBAGE SALAD BY SAM ZIEN

Warm Cabbage Salad by Sam Zien image

From Sam Zien's "Just Cook This!" cooking show on Discovery Health. Similar to other warm cabbage salads listed on Recipe Zaar, but a napa cabbage is used. The ready-bacon is fine, but this would probably be better with pre-cooked regular bacon cut into small pieces.

Number Of Ingredients 5

6 ounces honey mustard dressing
6 cups finely shredded napa cabbage, about 1 medium head

WARM CABBAGE SALAD WITH BACON AND ROQUEFORT

Warm Cabbage Salad with Bacon and Roquefort image

Provided by Food Network

Yield 4 servings

Number Of Ingredients 11

4 ounces thick-sliced bacon, cut crosswise into 3/4-inch pieces
Freshly ground black pepper
1/4 cup dry white wine
1 small shallot, finely minced
1/4 cup plus 2 tablespoons heavy cream
1 teaspoon Dijon-style mustard
Salt
3 cups finely sliced green cabbage
3 cups finely sliced red cabbage
1 tablespoon white wine vinegar
1/2 cup crumbled Roquefort

Steps:

  • In a large heavy skillet over moderate heat add the bacon pieces, generously season with ground pepper and cook until crisp. Transfer the cooked bacon to paper towels to drain and remove the skillet from the heat. In a small saucepan combine the wine and shallots and simmer until reduced to a thick syrup. Whisk in the cream, mustard, salt and pepper and continue to simmer until thickened slightly. Heat the skillet with the bacon drippings over moderately high heat and cook the green cabbage, stirring, until it just begins to wilt, about 1 to 2 minutes. Transfer the wilted cabbage to a bowl and cook the red cabbage in the remaining drippings in the same manner. Return the wilted green cabbage to the skillet, add the vinegar and cook, stirring, 1 minute. Stir in the cream mixture and cook, stirring, until cabbage is crisp-tender. Serve the cabbage warm topped with the crumbled Roquefort and bacon.;

Tips:

  • Select the right cabbage: Choose a firm, heavy head of cabbage with tightly packed leaves for the best flavor and texture.
  • Slice the cabbage thinly: This will help it cook evenly and absorb the dressing better.
  • Massage the cabbage: Massaging the cabbage with salt helps to soften the leaves and release their natural flavors.
  • Use a flavorful dressing: The dressing is what really makes this salad shine, so be sure to use a dressing that you love. A simple vinaigrette or a creamy dressing with bacon or cheese are both great options.
  • Serve warm: This salad is best served warm, so make sure to enjoy it right away.

Conclusion:

Warm cabbage salad is a delicious and healthy dish that is perfect for a quick and easy meal. With its simple ingredients and flavorful dressing, this salad is sure to become a favorite. So next time you're looking for a healthy and satisfying salad, give this warm cabbage salad a try. You won't be disappointed!
