BALSAMIC ROASTED BEET SALAD

Balsamic Roasted Beet Salad image

Provided by Ina Garten

Time 1h20m

Yield 6 servings

Number Of Ingredients 8

8 medium-size beets, tops removed and scrubbed
1/2 cup balsamic vinegar
1/2 cup good olive oil
2 teaspoons Dijon mustard, such as Grey Poupon
Kosher salt and freshly ground black pepper
4 ounces baby arugula
1/3 cup roasted, salted Marcona almonds, toasted
4 ounces soft goat cheese, such as Montrachet, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Wrap the beets individually in aluminum foil and place them on a sheet pan. Roast them for 50 minutes to 1 hour, depending on their size, until a small sharp knife inserted in the middle indicates that they are tender. Unwrap each beet and set aside for 10 minutes, until cool enough to handle. Peel the beets with a small, sharp knife over a piece of parchment paper to prevent staining your cutting board.
  • Meanwhile, whisk together the vinegar, olive oil, mustard, 2 teaspoons salt, and 1 teaspoon pepper and set aside. While the beets are still warm, cut each one in half and then each half into 4 to 6 wedges and place them in a large mixing bowl. As you're cutting the beets, toss them with half of the vinaigrette (warm beets absorb more vinaigrette), 1 teaspoon salt, and 1/4 teaspoon pepper. Taste for seasonings.
  • Place the arugula in a separate bowl and toss it with enough vinaigrette to moisten. Put the arugula on a serving platter and then arrange the beets, almonds, and goat cheese on top. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper, and serve warm or at room temperature.

BORSCHT SALAD

Borscht Salad image

There are loads of ways to prepare beets beyond just pairing them with goat cheese, and in 2013, Mark Bittman looked at about a dozen or so of them. Here, they're grated, not roasted whole, and paired with shredded cabbage and dill, some of the dominant ingredients in borscht. It's a nontraditional approach to beets and borscht alike, ready in minutes.

WARM BEET SALAD

Warm Beet Salad image

Most people eat the beetroot and toss the greens. But the greens, when cooked, are super-tasty and nutritious. This recipe was created with flexibility in mind, and is a great way to use up leftover ingredients.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Number Of Ingredients 6

Beets, with beet greens
Garlic
Red pepper flakes
1/2 orange
Olive oil
Salt and pepper

Steps:

  • Chop beet greens. Peel and cut beets into matchsticks. Saute greens with garlic and red pepper flakes. Remove from pan and saute beets until tender; squeeze half an orange over top. Drizzle with olive oil. Season with salt, pepper, and more orange juice.

Tips:

  • Choose the right beets: Look for small to medium-sized beets with smooth, firm skin. Avoid beets with blemishes or bruises.
  • Roast the beets: Roasting the beets intensifies their flavor and makes them tender. You can roast beets in the oven at 400°F for about 45 minutes, or until they are tender when pierced with a fork.
  • Use a variety of greens: This salad is a great way to use up leftover greens. You can use a mix of baby spinach, arugula, kale, or any other type of greens you like.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to a week. This makes it a great option for a quick and easy weeknight meal.
  • Serve the salad warm or cold: This salad is delicious served warm or cold. If you're serving it warm, heat the roasted beets in a pan over medium heat until they are warmed through. If you're serving it cold, chill the roasted beets and greens in the refrigerator before assembling the salad.

Conclusion:

This warm beet salad with dill is a delicious and healthy side dish that is perfect for any occasion. It's easy to make and can be served warm or cold. The roasted beets are tender and flavorful, and the dill dressing adds a bright, tangy flavor. This salad is sure to be a hit at your next party or potluck.
