CRAB AND ASPARAGUS TART
A savory tart, its silky custard thickly studded with crab meat to pick up the sweetness of the wines, and asparagus to tame tropical fruit and citrus flavors with vegetal, mineral notes and a hint of bitterness, will make for a lovely lunch or a predinner snack. Come summer, some diced zucchini can replace the asparagus. It also delivers a kick, not in the filling but in the pastry. There's no heat from the subdued alcohol in the bottle. The cayenne in the crust makes up for it.

Tips:
- Choose fresh, high-quality ingredients: Use the best asparagus, crab, and other ingredients you can find for the best flavor.
- Don't overcook the asparagus: Asparagus should be cooked until it is tender-crisp, not mushy. Blanching or steaming the asparagus for 2-3 minutes is a good way to achieve this.
- Use a good quality mayonnaise: Mayonnaise is a key ingredient in this spread, so it's important to use a good quality brand. Look for mayonnaise made with fresh eggs and oil.
- Season the spread to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lemon juice or a pinch of cayenne pepper for a little extra flavor.
- Serve the spread immediately: This spread is best served immediately after it is made. It can be stored in the refrigerator for up to 2 days, but the flavor is best when fresh.
Conclusion:
Warm asparagus crab spread is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to use up leftover asparagus. With its creamy, flavorful filling and crispy asparagus topping, this spread is sure to be a hit with everyone who tries it.
