Time 1h50m

Number Of Ingredients 12

2 cups granulated sugar
1 cup butter (, room temperature)
2 large eggs
6 apples (,small/medium size, grated (cored, but keep the peel on))
2 teaspoons baking soda
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 cup chopped walnuts (, optional)
1 cup heavy whipping cream
1/2 cup light brown sugar
1/2 cup granulated sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together the butter and sugar until well blended. Add the eggs and mix well.
  • Stir in the freshly grated apple. It may seems like the grated apple is completely taking over the dish - this is a good thing :).
  • In a separate bowl, mix together the dry ingredients. Add to the wet ingredients and mix, just until incorporated.
  • Bake in a greased 9x13 inch pan for 40-50 min, or until a toothpick inserted in the center of the cake comes out clean. (Depending on how large your apples were, you may need to cook it a little longer than 50 minutes).
  • Allow the cake to cool for at least 10 minutes. Serve warm with caramel sauce and whipped cream or ice cream.

OLD FASHIONED WARM APPLE CAKE

Old Fashioned Warm Apple Cake image

This cake starts with a buttery spiced batter and itty bitty chunks of juicy, sweet and tart apples are mixed in. Then it's baked up to perfection and served warm with a sticky, warm brown sugar sauce (that tastes like caramel!). This cake is what fall is all about!

Time 55m

Number Of Ingredients 19

2 cups (284g) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt or table salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
4 cups (468g) peeled, cored and 1/4-inch diced apples*
1 Tbsp fresh lemon juice
1 cup (210g) granulated sugar
1/4 cup (58g) packed light-brown sugar
1/2 cup (113g) unsalted butter, softened
2 large eggs
1/2 cup chopped pecans, (for topping (optional))
1/2 cup (113g) unsalted butter, diced into 1 Tbsp pieces
1 cup (220g) packed light-brown sugar
1/4 cup milk
1/4 tsp fine sea salt or table salt
1/2 tsp vanilla extract

Steps:

  • For the apple cake: Preheat oven to 350 degrees. Spray a 13 by 8-inch baking dish with non-stick cooking spray.
  • In a medium mixing bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves for 20 seconds, set aside. In a separate medium mixing bowl toss apple cubes with lemon juice, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment whip together granulated sugar, brown sugar, and butter until pale and fluffy.
  • Mix in eggs one at a time. With mixer set on low speed slowly add in flour mixture and mix just until combined (batter will be really thick).
  • Add apples and mix just until combined (batter will still be thick). Pour batter into prepared baking dish and spread into an even layer.
  • Bake in preheated oven until toothpick inserted into center comes out free of batter (a moist crumb is fine), about 33 - 38 minutes (prepare topping around last 5 - 10 minutes of baking so they'll both be served warm).
  • Let cool about 5 minutes then cut into squares and serve warm topping each slice with sauce and optional pecans.
  • For the sauce: In a medium saucepan combine butter, brown sugar, milk and salt (you can add a little extra if you like more of a salted caramel/toffee flavor).
  • Bring mixture to a boil over medium heat, stirring occasionally. Allow to boil 1 1/2 minutes, stirring occasionally.
  • Let sauce cool slightly. Serve warm over warm cake.

APPLE CAKE WITH HOT CARAMEL SAUCE

Apple Cake With Hot Caramel Sauce image

Provided by Marcia Adams

Categories     dessert

Time 45m

Yield Eight servings

Number Of Ingredients 16

1/2 cup pecans
5 medium apples to yield 2 1/2 cups chopped (use firm cooking apples like Northern Spy or McIntosh)
1/2 cup butter at room temperature
1 cup granulated sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 scant teaspoon ground nutmeg
1 cup all-purpose flour
1/2 cup butter
1 cup light brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup evaporated milk
Sweetened whipped cream and fresh unpeeled apple slices

Steps:

  • To make the cake, preheat the oven to 350 degrees. Place the pecans in the workbowl of a food processor and process until fine. Set aside. Peel, core and quarter the apples and place them in the workbowl of the processor and process until they are in medium-coarse shards, about the size of almonds. Set aside.
  • Place the butter in a large mixer bowl, add the sugar and beat until fluffy. Add the egg and beat until blended. Add the soda, salt, cinnamon, nutmeg and mix quickly. Add the flour and just blend, then the apples and nuts.
  • Pour the mixture into a greased 9-inch-round cake pan and bake for 30 minutes or until the top springs back when touched with a finger. Cool slightly. Center may sink somewhat.
  • For the caramel sauce, melt the butter, brown sugar and salt in a small saucepan over medium heat. Bring to a boil, stirring with a whisk. Remove from the heat and add the vanilla and milk. Stir again with the whisk.
  • To serve the sauce with the apple cake, cut the cake into eight wedges. Ladle a large spoonful of the hot sauce onto each of eight dessert plates. Place a wedge of cake on top of the sauce. Garnish with a dollop of whipped cream and two apple slices.

Tips:

  • Use a variety of apples. This will give your cake a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn apples.
  • Peel and core the apples before you slice them. This will make it easier to slice the apples evenly and will also prevent the skins from toughening up in the cake.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.
  • Serve the cake warm with your favorite toppings. Some good options include vanilla ice cream, whipped cream, or caramel sauce.

Conclusion:

This warm apple cake is a delicious and easy-to-make dessert that is perfect for any occasion. The cake is moist and flavorful, and the apples give it a sweet and tart flavor. The optional caramel sauce is the perfect finishing touch, and it really takes the cake to the next level. Whether you serve it for breakfast, lunch, or dinner, this cake is sure to be a hit.
