1 cup yellow cornmeal
1 tablespoon baking powder
1¼ teaspoons salt
2½ tablespoons sugar
2 teaspoons finely chopped fresh thyme
¾ cup frozen corn kernels (no need to thaw; just be sure they are not stuck together)
1 cup grated sharp Cheddar cheese
1¼ cups milk
2 large eggs
1 stick (½ cup) unsalted butter, melted and slightly cooled

Steps:

  • Preheat the oven to 400°F. Spray a 9-inch square glass or metal baking dish with nonstick cooking spray.

1-1/4 cups dried cranberries or cherries
3/4 cup chopped walnuts, toasted

  • In a large bowl, combine 3 cups all-purpose flour, oats, whole wheat flour, brown sugar, salt and yeast. In a small saucepan, heat water and butter to 120°-130°.
