WALNUT TEA SANDWICHES
Recipe source: The Book Club Cookbook -- describing a wonderful way to discus Jane Eyre at your book club while nibbling on these wonderful tea sandwiches -- best if used very thin bread (suggestion: Pepperidge Farm thinly sliced bread/a combination of white and wheat would be pretty on a tray). Suggested to make sandwiches ahead of time and then cover them with waxed paper and then refrigerate them to prevent drying out -- but it is still best to prepare sandwiches as close to serving time as possible.

Yield 48 tea sandwiches, 10-12 serving(s)

Steps:
- In a large bowl combine first 4 ingredients (cream cheese - bell pepper) and stir in the onion, lemon juice and nutmeg. Season to taste with salt and pepper. Refrigerate for 1 hours.
- Spread one side of each piece of bread with butter and then top the buttered side of 12 slices of bread with the cream cheese mixture topping with another slice of bread, buttered side down. Cut off crusts with a sharp knife.
- Cut sandwiches diagonally into quarters.
Tips:
- Make sure the walnuts are finely ground. This will help them blend seamlessly into the tea sandwich filling and prevent the sandwiches from becoming too chunky.
- Use high-quality tea. The flavor of the tea is an important part of these sandwiches, so it's worth investing in a good brand. Earl Grey or Darjeeling are both good choices.
- Don't overmix the filling. Overmixing can make the filling tough. Just mix until the ingredients are well combined.
- Use fresh bread. Fresh bread will make your sandwiches taste much better than stale bread.
- Cut the sandwiches with a sharp knife. This will help prevent the bread from tearing.
- Serve the sandwiches immediately. Tea sandwiches are best served fresh. If you need to make them ahead of time, store them in the refrigerator for up to 24 hours.
Conclusion:
Walnut tea sandwiches are a classic afternoon tea treat. They're easy to make and can be tailored to your own taste preferences. Whether you like them simple or prefer a more elaborate filling, these sandwiches are sure to please. So next time you're looking for a light and refreshing snack, give walnut tea sandwiches a try.
