2 to 4 tablespoons fine breadcrumbs
3 large eggs, at room temperature, separated
1/2 cup/100 g granulated sugar
4 tablespoons grated bittersweet chocolate, optional
1/4 cup/60 g butter, melted until soft enough to pour but not oily
1 tablespoon espresso, Cognac, Irish cream liqueur or other liqueur
Confectioners' sugar, for serving
Whipped cream and chocolate shavings, or coffee ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C. Grease an 8-inch/20-cm round cake pan and line with parchment paper.
  • Grind the walnuts together with the breadcrumbs in a food processor. Put the egg whites in a large bowl for whisking. 1 1/4 cups unbleached all-purpose flour
1 teaspoon baking powder
pinch of salt
1/2 cup (1 stick) unsalted butter, at room temperature, cut into pieces
1 cup sugar
2 large eggs, at room temperature, separated
1/2 cup milk
1 cup chopped walnuts
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter
6 small Bosc pears, cored, peeled and cut into 1/4-inch pieces
2 tablespoons brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons fresh lemon juice
1 cup heavy cream
1 tablespoon sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F. Lightly butter and flour a 9-inch round cake pan and tap out the excess flour.
