Great way to use up leftover turkey. From Taste of Home magazine, but I tweaked it to use non-fat yogurt and mayo.

Time 10m

Yield 4 sandwiches, 4 serving(s)

Number Of Ingredients 12

1 cup diced cooked turkey
2/3 cup chopped peeled apple
1 celery rib, finely chopped
1/2 cup chopped walnuts, toasted
1/4 cup golden raisin
1/3 cup non-fat vanilla yogurt
1/3 cup fat-free mayonnaise
1/2 teaspoon dried tarragon
1/2-1 teaspoon grated orange peel
1/8 teaspoon kosher salt
1 dash fresh ground pepper
4 whole-wheat sandwich buns, split

Steps:

  • In a bowl, combine the turkey, apple, celery, walnuts and raisins.
  • In a separate small bowl, combine the yogurt, mayonnaise, tarragon, orange peel, salt and pepper.
  • Pour dressing over turkey mixture and stir to coat. Spoon 1/2 cup onto each roll.

Tips:

  • Fresh ingredients go a long way in making a delicious salad. Use the ripest and freshest fruits, vegetables, and herbs you can find.
  • Don't be afraid to experiment with different flavors and textures. A little bit of crunch from chopped walnuts or celery, or a touch of sweetness from grapes or dried cranberries, can really elevate the salad.
  • If you're using cooked turkey, make sure it's cooled completely before adding it to the salad. This will help prevent the salad from becoming watery.
  • Use a light hand when dressing the salad. You don't want to overwhelm the other flavors with too much mayonnaise or dressing.
  • Serve the salad immediately, or chill it for a few hours before serving. This will allow the flavors to meld and develop.

Conclusion:

Waldorf turkey salad is a classic for a reason. It's a delicious, refreshing, and easy-to-make salad that's perfect for any occasion. Whether you're serving it as a light lunch or dinner, or as a side dish at a potluck, this salad is sure to be a hit. So next time you're looking for a quick and easy salad recipe, give Waldorf turkey salad a try. You won't be disappointed.
