1/2 cup halved red seedless grapes
4 Boston lettuce leaves
1/2 cup chopped toasted walnuts

Steps:

  • In a medium bowl, whisk together yogurt and lemon juice; season with coarse salt and ground pepper.

3 cups apples, chopped, about 3-4 medium apples (I used Honey Crisp apples)
1 cup celery, chopped
1/2 cup pecans, chopped (walnuts or almonds can be substituted)
1/4 cup dried cherries or raisins
1/4 cup vanilla Greek yogurt (I prefer my salad dressed lightly, but you can add more if you prefer it with more)
zest of a medium lemon
2 tsp fresh lemon juice
1 tsp sugar
1 tsp honey
1/2 tsp cinnamon
1/4 tsp nutmeg

Steps:

  • In a large bowl toss apples, celery, pecans, and cherries together. Set aside.
  • In a small bowl, mix yogurt with lemon zest, lemon juice, sugar, honey, cinnamon, and nutmeg.
  • Pour dressing over the fruit mixture, and stir until coated.

So I mixed and matched and experimented, and finally came up with a perfect twist on the classic Waldorf Salad recipe. Now I get requests for it at every family get together!

2 Granny Smith apples, cored and diced
1 Red Delicious apple, cored and diced
1 Asian pear, cored and cubed
1 stalk celery, diced
½ cup sliced almonds
1 cup golden raisins
1 cup seedless green grapes, halved
1 ½ cups sweetened dried cranberries
1 ¼ cups plain yogurt
¼ cup white sugar
⅓ cup brown sugar
¾ cup mayonnaise
3 tablespoons lemon juice
½ teaspoon ground cinnamon
