LENTIL SALAD WITH WALNUT OIL

Lentil Salad With Walnut Oil image

This dish is inspired by a recipe from "The Paris Cookbook," by Patricia Wells. I'd never thought about using walnut oil, which is high in omega-3 fats, with lentils. It's a great combination. Be sure to keep walnut oil in the refrigerator once it's opened.

WALDORF SALAD

Waldorf Salad image

This simple apple salad got its name from the luxurious Waldorf-Astoria Hotel in New York. Invented in 1896 not by a chef but by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. As often happens, many variations evolved-some with raisins, some with chopped nuts. This one has green apples and red seedless grapes.

Tips:

  • Use fresh, high-quality ingredients: The better the ingredients, the better the salad will taste. Look for crisp apples, celery, and walnuts, and use a good quality mayonnaise.
  • Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and ruin the texture of the salad.
  • Use a light hand with the mayonnaise: Mayonnaise is a rich and flavorful ingredient, so a little goes a long way. Too much mayonnaise will overwhelm the other flavors in the salad.
  • Chill the salad before serving: This will help the flavors to meld and will make the salad more refreshing.

Conclusion:

Waldorf salad with lentils and pine nuts is a delicious and healthy salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you are looking for a light and refreshing lunch or a hearty and satisfying dinner, this salad is sure to please.
