WAFFLE IRON GRILLED CHEESE SANDWICHES

Waffle Iron Grilled Cheese Sandwiches image

More method than recipe, I heated up my panini maker one night to make a grilled cheese, only to find out that I'd left the waffle plates inside. Instead of changing out the plates, I used them anyway and I loved the outcome. The sandwich gets super crispy but the cheese is still soft and gooey inside the little squares. It's my 'go to' method for grilled cheese now. Serve with spicy pickled veggies on the side!

Time 17m

Yield 2

Number Of Ingredients 4

2 tablespoons mayonnaise
2 teaspoons Dijon mustard
4 slices whole-grain bread
2 ounces shredded pepperjack cheese

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix mayonnaise and Dijon mustard together in a bowl; spread onto 1 side of each bread slice. Sprinkle pepperjack cheese over mayo-mustard layer of 2 bread slices. Cover cheese layer with a second bread slice, creating 2 whole sandwiches.
  • Place 1 sandwich in the waffle iron, taking care not to push down all the way. Wait until the bread begins to soften from the heat before starting to gently close the waffle iron, about 2 minutes. Apply more pressure to the top part of the iron, eventually closing it after a total of 3 to 4 minutes. Cook until browned, 2 to 3 minutes more. Repeat with the remaining sandwich.

WAFFLE-GRILLED HAM AND CHEESE

Waffle-Grilled Ham and Cheese image

Make a few extra waffles on the weekends, and turn the leftovers into this kid-favorite sandwich. (Okay, so maybe it's an adult-favorite, too!)

Provided by Jennifer Perillo

Time 10m

Yield 2 servings

Number Of Ingredients 5

4 cooked waffles
2 slices Swiss cheese, halved
Dijon mustard, optional
2 slices ham
Butter or nonstick spray, for greasing

Steps:

  • Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
  • Heat a nonstick skillet or cast-iron pan over medium heat.
  • Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
  • Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.

Tips:

  • Use thick-sliced bread for a heartier sandwich.
  • Spread butter or mayo on the outside of the bread slices to help them brown and crisp.
  • Use a variety of cheeses for a more flavorful sandwich.
  • Add other ingredients to the sandwich, such as sliced ham, bacon, or avocado.
  • Cook the sandwich until the cheese is melted and gooey and the bread is golden brown and crispy.
  • Serve the sandwich immediately with your favorite sides.
