YOU WON'T BE SINGLE FOR LONG VODKA CREAM PASTA
This recipe will make enough for two couples. If you plan a romantic evening where more than two's a crowd, reserve half the sauce to freeze for another supper before the addition of basil, and only cook 1/2 to 2/3 pound of penne.

Steps:
- Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
- While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.
- Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Steps:
- Cook the pasta according to the package directions, omitting salt and fat. Drain and keep warm.
- Heat oil in a large nonstick skillet over medium-high heat. Add onion to pan; sauté 4 minutes or until tender. Add 1/4 teaspoon salt, pepper, and garlic; sauté 1 minute. Add vodka; bring to a boil. Reduce heat, and simmer 3 minutes or until liquid is reduced by about half. Stir in 1/2 teaspoon salt, broth, and tomatoes; bring to a boil. Reduce heat, and simmer 8 minutes.
- Place tomato mixture in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Process until smooth.
- Return tomato mixture to pan; stir in cream. Cook 2 minutes over medium heat, stirring constantly. Remove from heat. Stir in cooked pasta, remaining 1/4 teaspoon salt, and basil. Serve immediately.
Tips:
- Use high-quality vodka. A good vodka will make a big difference in the flavor of your sauce. Look for a vodka that is smooth and has a neutral flavor.
- Don't boil the vodka. When you add the vodka to the pan, let it simmer for a minute or two, but don't let it boil. Boiling the vodka will cause the alcohol to evaporate and you'll lose the flavor.
- Use a good quality heavy cream. A good heavy cream will make your sauce rich and creamy. Look for a heavy cream that is at least 36% fat.
- Grate the Parmesan cheese fresh. Freshly grated Parmesan cheese will have a much better flavor than pre-grated cheese.
- Add the pasta to the sauce, not the other way around. This will help to prevent the pasta from sticking together.
- Serve the pasta immediately. Vodka cream pasta is best served hot and fresh.
Conclusion:
Vodka cream pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of vodka, cream, and Parmesan cheese creates a rich and creamy sauce that is sure to please everyone at the table. With a few simple tips, you can make a vodka cream pasta that is restaurant-quality. So next time you're looking for a quick and easy meal, give vodka cream pasta a try. You won't be disappointed.
