16 ounces penne pasta (or any tubular pasta)
1 1/2 cups marinara sauce
1 tablespoon chopped fresh dill
1/4 cup vodka
8 ounces smoked salmon, cut into bite-sized pieces
1/2 cup frozen peas, thawed
2/3 cup heavy cream

Steps:

  • Cook pasta in salted water according to package directions to al dente. Drain and keep warm.
  • Meanwhile, in a large saucepan over medium heat, simmer the marinara sauce, dill and vodka for 15 minutes. Add the salmon pieces, peas and cream and heat through.

12 ounces penne pasta
1 shallot
1 15 oz can pureed or crushed tomatoes
1/2 cup vodka
2/3 cup chicken broth
2 uncooked salmon fillets, chopped
chopped fresh dill - to taste, a good handful
fresh thyme - to taste, a good handful
2/3 cup heavy cream
salt and pepper to taste (don't be bashful)

Steps:

  • Boil pasta in salted water until al dente. While pasta is cooking, make the sauce. Saute shallot in olive oil in skillet. Add tomatoes (and spinach/kale if desired) and vodka and cook for 2 minutes. Add chicken broth and herbs. Add salmon and gently cook for five minutes. Stir in cream. Add cooked pasta to skillet and coat with sauce. Taste for seasonings, adding salt and pepper as desired. Serve with grated Parmesan and crusty bread.

1 Tbsp ex vir oo
1 Tbsp butter
2 clove garlic, minced
2 small or 1 large shallot(s), minced
1 c vodka
1 c chicken broth
1 28-oz can plum tonatoes, crushed
1/2 c heavy cream
1 lb penne, cooked al dente (i like mezze penne-the smaller)
1/2 bunch fresh basil, torn into pieces
fresh grated parm, salt & pepper

Steps:

  • 1. Melt butter & oil over med heat. Add shallots & garlic & toss about 2-3 mins. (Don't burn garlic!) Remove from heat.
  • 2. Add vodka & stir. Return to heat. Cook & stir about 7 mins until vodka reduces by half. Add broth & tomatoes (w/juice) & boil. Reduce heat & season w/ salt & pepper. Simmer 20-25 minutes.
  • 3. Whisk in cream & bring to light boil. Remove from heat. Add pasta & basil & toss. Serve w/ Parm on top. NOTE: If you prefer to add smoked salmon, sautee lightly & then place atop or in sauce directly. Yum. :)

12 ounces penne pasta, cooked and drained
2 tablespoons olive oil
1 whole shallot (thinly sliced)
4 roma tomatoes (seeded and chopped)
2/3 cup whipping cream
1 pinch ground nutmeg
2 tablespoons fresh dill (chopped,or 1-2 tsp dried dill weed)
1/3 cup vodka
6 ounces smoked salmon (cut into strips)
white pepper
1 sprig fresh dill (optional)

Steps:

  • Heat oil in a wide frying pan over medium-low heat.
  • Add shallot and cook, stirring often, until soft but not brown (about 3 minutes).
  • Stir in chopped tomatoes, cover and simmer for 5 minutes.
  • Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.
  • Add pasta to sauce and mix lightly using 2 spoons, until pasta is well coated.
  • Remove from heat.
  • Add salmon and mix lightly.
