BROILED PEAR AND PROSCIUTTO TOASTS

Broiled Pear and Prosciutto Toasts image

Here is a wonderful little snack, or brunch item, that is a testament to it's ingredients--not the maker. A broiled pear slice draped across hot molten cheese toast, then topped with crispy prosciutto. So satisfying, yet so easy to prepare. It is a perfect stand-alone, or accompaniment to creamy soups!

HONEYED BLUE CHEESE TOAST

Honeyed Blue Cheese Toast image

I *love* these. With a nice rich white wine... these are delicious, and easy breezy to make! This is another recipe that I make from the school of 'some'; there's really not amount to how much to use, just a 'bit' of everything. This recipe is great because your oven temp is not very important. Making a pie while making these? just stick it in the oven! All you need is for the cheese to melt and the bread, cheese, and honey to warm through.

I love those cheesy garlic bread toasts they sell in the freezer section. These are like them. Use with your favorite meal or under the Recipe #139579. I found these in Cuisine at Home.

Tips:

  • To make the perfect toasts, use a sturdy bread that can hold up to the toppings. A baguette or a sourdough bread would be a great option.
  • Make sure to slice the bread into thin, even slices so that they toast evenly.
  • For the red wine pear compote, use a dry red wine. This will help to balance out the sweetness of the pears.
  • Cook the pears in the red wine until they are soft and caramelized. This will take about 15-20 minutes.
  • When assembling the toasts, start with a layer of the red wine pear compote. Then, add a slice of blue cheese and a few slices of prosciutto. Drizzle with olive oil and sprinkle with black pepper.
  • Toasted in a preheated oven until the cheese is melted and bubbly. This will take about 5-7 minutes.
  • Serve the toasts immediately, while they are still warm.
