- In the morning, put the beans in a large pot and fill with water. Bring the beans to a boil, discard the water and bring to a boil for a second time, again discard the water. Cook until the beans reach the desired softness, they will not soften in the VitaClay pot. Mix the remaining ingredients (except onion and bacon) in a sauce pan and bring to a boil, boil until thick. Line the bottom of the clay pot with some of the bacon, mix the sauce, onion and beans together, then add to the clay pot. Top with remaining bacon. Note: If you'd like, you can soak the navy beans overnight in water, instead of double boiling them before starting. Select 'slow cook', 'soup' - 2 hours After the two hours is up the pot will switch to the 'keep warm' feature which is about 156 degrees. Allow it to remain in the 'keep warm' for about 4 or 5 hours.

- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and transfer beans to a pot; add enough water to cover beans.
