Time 8h15m

Yield 14 serving(s)

Number Of Ingredients 9

2 1/2 lbs trimmed boneless pork loin roast or 2 1/2 lbs pork shoulder
1/2 medium onion, minced
1 cup ketchup
1/2 teaspoon sugar
2 1/2 teaspoons dry mustard
1/4 teaspoon chili powder
1 1/2 teaspoons Worcestershire sauce
3/4 teaspoon cider vinegar
1/4 teaspoon cayenne pepper

Steps:

  • Cut roast into chunks. Place in 3-quart or larger slow cooker.
  • Mix onion, ketchup, sugar, mustard, chili powder, Worcestershire sauce, vinegar, pepper. Pour on roast. Cook on low for 8 hours.
  • Remove pork from cooker; shred. Mix with sauce in cooker.

Tips:

  • Selecting the Right Cut of Meat: Choose pork shoulder, also known as Boston butt, for a flavorful and tender result. Beef brisket or ribs are other popular options.
  • Preparing the Meat: Trim excess fat from the meat, leaving a thin layer for moisture. Apply a dry rub, consisting of spices and seasonings, to enhance the flavor.
  • Smoking Technique: Use indirect heat to cook the meat slowly and evenly. Maintain a consistent temperature between 225°F and 250°F. Control the heat and smoke by adjusting the vents on your smoker.
  • Cooking Time: Allow sufficient time for the meat to reach an internal temperature of 195°F to 205°F. This ensures tenderness and prevents dryness.
  • Sauces and Sides: Virginia barbecue is traditionally served with a vinegar-based sauce. Consider making your own sauce or choosing from various commercial options. Accompany the barbecue with classic sides like coleslaw, potato salad, baked beans, and cornbread.

Conclusion:

Creating authentic Virginia barbecue requires patience, attention to detail, and a passion for smoky flavors. By following these tips and experimenting with different techniques, you can elevate your barbecue skills and impress your friends and family with delicious, tender, and flavorful barbecue.
